Yeast Infection Diet - The Food You Must Include to Rid Yourself of Candida Infections

What do you mean 'yeast infection diet'? I can cure myself eating the right food? Yeast or Candida Albicans infection occur very frequently in women, though men and even children may also be affected. The root cause of the infection is an overgrowth of a naturally occurring fungus: Canida Albicans. The areas of the body most commonly affected are the vagina, in the case of babies - diaper rash, thrush (throat and mouth) and the male genitals. With the right diet you can help your body heal itself from Candida overgrowth and avoid further outbreaks

Yeast Infection Diet - What You SHOULD Eat:

- Colorful veggies (everything yellow, purple, red and green, like bell peppers, carrots, lettuce, tomatoes)
- Other vegetables such as sweet potatoes, bok choy, celery, romaine lettuce, cabbage, brocoli and spinach
- Whole grain and low carb breads, pastas, noodles and rice
- Sugar free salad dressings, a limited serving though
- Garlic, onion, olive oil, organic apple cider vinegar, fresh herbs
- Fresh fruit, such as lemons, apples, limes, oranges, pine apple, berries, melons
- Protein in forms of fish, chicken, eggs, turkey (either baked or broiled)
- Unsweetened soy milk and plain yogurt (great to re-establish bacterial balance)
- A little butter, almond butter, walnuts, almonds, roasted soy nuts and pumpkin seeds, all rich in unsaturated fat

Yeast Infection Diet - What You SHOULDN'T Eat:

- A lot of spices, very spicy food won't be helpful, but rather irritating your already infected tissue
- Beverages such as fruit punch, caffeinated teas and drinks, sodas, colas, sweetened fruit juice, sugared drinks, coffee
- Peanuts and peanut butter, pistachios
- Certain dairy products like cheese, milk, flavored yogurt, ice cream
- Meats such as red meat and pork, sandwich meats, salami, bacon, bologna, hot dogs, sausage
- White flour bread and products such as hamburger buns and hot dog buns, soda crackers and others, bread sticks, bread crumb coating
- White vegetables like white rice, potatoes, corn grits, and all types of canned veggies, since they lose most of their vitamins in the canning process
- Alcohol and fermented foods like beer, ginger ale, cider, soy sauce, most salad dressings
- Sugars, including honey and white sugar

Under normal circumstances our immune system prevents and handles yeast overgrow. With a yeast infection diet you can give your immune system a boost to eliminate overgrowth and to prevent Candida infections more efficiently.

Fowl Ball - The History of Chicken Stew

Chicken stew is a delicious, warming meal. It is simple to make and you can make a lot of different variations of this tasty dish. Chicken stew actually has a fascinating history and this dish has been enjoyed for many centuries.

A stew is a combination of two or more foods simmered in a liquid. Coq au vin, Hungarian goulash, beef bourguignon, and beef stroganoff are all examples of stews.

The "Apicius de re Coquinaria" is the oldest cookbook ever discovered. It contains fish and lamb stew recipes, although chicken had been domesticated by then too. There were three Romans with that name living between 1 BC and 2 AD and the book is believed to have been compiled by one of them.

You can actually go back even further because primitive tribes used to boil foods together, which is what a stew essentially is. Amazonian tribes uses turtle shells as pans and would boil the turtle entrails with some other ingredients. Other cultures used large shells, such as clamshells, instead of pans. Archeological evidence points to this type of cookery going back seven or eight thousand years. The invention of pottery, about ten thousand years ago, made cooking stews easier.

Fowl such as chicken has been domesticated for thousands of years and chicken stew has been a longstanding popular dish. Different cultures have different chicken stews, such as the peanut butter chicken stew preferred in parts of Africa and the spicy chicken stew made in Morocco.

Chicken Stew Varieties

One type of chicken stew, which is a couple of hundred years old, is chicken booyah. This is like a thick soup or a thin stew and is eaten in northeast Wisconsin. The first Belgian immigrants came to Wisconsin in 1853 and they spoke a language called Walloon, which is nothing like English or French. It is thought that the Belgian wrote down booyah because he did not know how to spell bouillon and the name stuck.

Delicious Southern Chicken Stew

You might have heard of southern chicken stew too and it is still a very popular dish in some states, especially North Carolina. To make this dish, a whole chicken is parboiled in a milk or cream based broth and butter, salt, and pepper are added as well as other ingredients. This stew varies from thin to thick in consistency and from white to yellow in color, depending on the amount of butter or margarine used. Saltine crackers are often served with this dish.

Southern chicken stew is often served in the coolest months of the year and the phrase "chicken stew" can refer to the gathering itself rather than the food. A chicken stew recipe is usually thought of as a comfort food because these recipes are cheap to make, enjoyed by nearly everybody and they are warming and flavorful. This is a common dish served at social gatherings such as church fellowships, family reunions, and community fundraisers.

The chicken stew at these events will often be made in a big cast iron or stainless steel cooking pot, maybe outdoors over an open fire. You might get coleslaw, a grilled cheese sandwich or rice served with the chicken stew.

Break The Routine With Some Cooking Games

Cooking games are gaining in popularity at bridal showers, home parties for direct sellers like The Pampered Chef and Tastefully Simple and other such get-togethers when people do want to cook or see someone cook but don't want it to be boring.

Here are some cooking games you can try at your next girl's night out or even a couple's dinner so that you all get to eat homemade food while having fun at the same time.

Cooking in Reverse

This is a popular cooking game as instead of cooking something from a list of ingredients provided to you, you actually have to write down the ingredients from the dish served. You can obviously tell the main things like whether it is chicken with broccoli served with noodles. But the sauces and seasonings used and how everything was put together can be a challenge. Depending on the skill and interest level of your friends, you can take it up a notch by even asking them to provide the quantity of the ingredients used and giving a prize to the person who ends up being closes to the original recipe.

Mixing Courses

Mixing courses is a fun cooking game because it lets you really think out of the box. It basically means finding innovative ways to serve breakfast staples at dinner and salads instead of dessert. How you whip up pancakes and waffles as a dinner entrée and how you can make your dessert the first thing on the table and a salad the last is up to you. That is what the cooking game is all about. It even gets people thinking of creative ways of incorporating cereal on pizza and orange juice with filet mignon.

Blind Tasting

This is a very old but still popular cooking game and is very simple. You basically blindfold the testers and ask them to guess what they are sampling. Always be sure of allergies anyone may have as you wouldn't want to ruin your party with someone being rushed to the emergency room as they were allergic to strawberries, peanuts or shellfish. Also, some people may have religious or other dietary restriction such a being a vegetarian so always be sure you know your guests likes and preferences. You could add a fun twist to this by getting a blindfolded friend chew on a jalapeño or some other spicy thing and see him clench his teeth!

The possibilities are endless when you have fun food and friends in the equation. Have fun!

you can as that is a very good antioxidant.

Top 4 Applebee's Recipes

Have you seen the movie Talladega Nights? In the movie, there is a scene where they are trying to decide where to eat for dinner. They start talking about going to one of those "fine dining restaurants", and the scene immediately cuts to Applebee's. Since I saw that movie, I now refer to all dine-in restaurants as "fine dining restaurants". Applebee's is one of the more traditional places to eat on the weekends. We have had Applebee's for many years in my area, but I still like to eat there occasionally. Since Applebee's seems to be located everywhere, many people have posted copycat Applebee's recipes online. I had a chance to review most of the Applebee recipes, and these are my Top Four Applebee's recipes.

APPLEBEE'S CRISPY ORANGE CHICKEN BOWL

2 pounds boneless, skinless chicken
1 egg, beaten
1 tablespoon vegetable oil
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 cup plus 1 tablespoon cornstarch
1/4 cup all-purpose flour
Oil (for frying)
Orange Glaze:
1 teaspoon minced garlic
1 cup orange juice
1/2 cup hoisin sauce
1/4 cup granulated sugar
1 1/2 teaspoons grated orange rind
Dash cayenne pepper
Salt and pepper to taste

Cut chicken into 2-inch pieces and place in a large bowl. Stir in egg, oil, salt, and pepper. Mix well and set aside.

Stir cornstarch and flour together in another large bowl and mix well. Add chicken mixture to the flour mixture, stirring to coat each piece well.

Pour enough oil to be at least 1/2-inch deep in a wok or heavy skillet and set over high heat. When it reaches 375 degrees F (hot!) carefully add chicken pieces in small batches and fry 3 to 4 minutes or until golden and crisp. Do not overcook or chicken will be tough. Remove chicken from oil with slotted spoon and drain on paper towels. Continue frying chicken in small batches until all are nicely browned and crisp. Set aside while you make the glaze:

Cool the oil in the skillet slightly, then remove all but 2 tablespoons of oil and set over medium heat. Saute garlic in oil for 1 minute (if the oil is too hot the garlic will turn bitter).

Add remaining glaze ingredients and bring to boil. Allow to boil for 3 minutes, stirring constantly. Reduce heat and simmer until sauce thickens to your liking, stirring frequently. Pour glaze over chicken.

Serve chicken over a bed of cooked white rice. Garnish with slivered almonds and crispy noodles.

Applebee's tosses the chicken and orange glaze with an array of stir-fry vegetables like broccoli, snow peas and red peppers.

APPLEBEE'S BLONDIE BROWNIES RECIPE

1 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1/8 teaspoon baking soda
1/2 cup walnuts
1/3 cup margarine
1 cup brown sugar
1 egg
1 tablespoon vanilla extract
1/2 cup white chocolate chips
1/2 cup maple syrup
1/4 cup butter

combine first 4 ingredients. add nuts, mix well and set aside.
melt butter, add brown sugar and mix well, then add egg and vanilla to mixture.
gradually combine with flour mixture, scraping bowl with a spatula. stir in white chocolate chips and pour into a 9 inch square pan. bake at 350 for 20-25 minutes until golden brown. serve hot with french vanilla ice cream.

APPLEBEE'S ORIENTAL CHICKEN SALAD

4 breaded chicken breast fillets
1 romaine heart
1 1/2 c. coleslaw mix (or finely shredded cabbage)
1/3 c. toasted almond slivers or slices (blanched almonds)
1/2 c. chow mein noodles

Dressing:

1/3 c. vinegar
1/2 c. sugar
3/4 tsp. salt
1 tsp. dry mustard
1 tsp. horseradish
1/4 c. spanish onion, diced
1 c. canola oil

Cook chicken fillets as directed.
To make dressing, combine everything but the oil in a blender of food processor and process until liquified.

Continue to blend and slowly drizzle in the oil until blended.

To be really authentic, make coleslaw with the cabbage and the dressing first and top it with the lettuce, almonds and noodles. Then cut up the chicken and add to salads.

I've had good results by layering first the romaine then the cabbage, almonds, chicken and dressing.

This should make 3 or 4 salads

APPLEBEE'S BONELESS BUFFALO WINGS

About 35 wings pieces

12 ounces Louisiana Hot Sauce
6 tablespoons margarine
3 tablespoons white vinegar
1 tablespoon Worcestershire sauce
1 1/4 teaspoons cayenne pepper
1/4 teaspoon garlic powder
1 1/2 tablespoons flour

Cook the wings until done either bake or deep-fry.

Mix all sauce ingredients except flour in a saucepan on the stove. Cook over low-medium heat. When warm, add flour to thicken sauce. Stir frequently.

When sauce is thick, cover bottom of 9 x 13-inch baking dish with sauce. Mix remaining sauce with wings and place in baking dish. Bake at 300 degrees for about 20 minutes or until warm.

Serve with celery sticks and blue-cheese dressing.

Using Avocado to Make Soup Recipes

Avocado is a fantastic ingredient to use in soup recipes because it is great for vegetarians and vegans and it has a nutty, creamy flavor. Some avocado soup recipes are based on chicken broth but not all of them. Perhaps you have never tried an avocado soup recipe before but avocado soup recipes do taste wonderful.

You can blend avocados, which are also knows as alligator pears or butter pears, in a food processor or blender to a smooth creaminess for use in soups. Haas avocados, which are the ones with a bumpy skin, are the best to use for avocado soup recipes because of their superior flavor.

Famous Recipes with Avocado

Avocado is also used to make famous Mexican recipes such as guacamole and several well known Mexican salad recipes, like seven layer salad. It can either be blended into a puree or chopped. You can also make recipes like shrimp cocktail with avocado, either by slicing the avocado finely or filling the hollow in the avocado with shrimp cocktail.

Avocado is used in sushi recipes, including California rolls, and it is also used to make milkshakes in Indonesia, Vietnam, South India, and Brazil. Avocados are served in salads or soups, mixed into white rice or as an accompaniment to meat or chicken in Central America and Mexico.

Avocados and Health

Avocados are high in vitamin B6, vitamin C, vitamin K, dietary fiber, copper, and folate. There is more potassium in an avocado than in a banana, which might surprise you.

It is true that avocados do contain cholesterol and fat, but a little now and then does not do any harm, as long as you eat a balanced diet. Avocados are creamy and rich and it is little wonder that many people adore them.

How to Make Creamy Avocado Soup

This is an amazing tasting soup and this recipe makes enough to serve four people if one cup of soup per serving is sufficient. You can double the recipe if you like. Serve this avocado soup recipe chilled or hot.

What you will need:

2 cups chicken broth
1/4 cup dry sherry
1 big, very ripe avocado
2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup heavy cream
1/4 teaspoon ground cumin

How to make it:

Warm the chicken broth in a pan. Peel the avocado and take out the stone. Cut the flesh into several pieces, and then puree it in a blender or food processor. Pour in the cream and then all the other ingredients, including the warm chicken broth.

Pulse the soup a few times until everything is blended and then add more salt and pepper if you think it needs it. Warm the soup back up gently in the pan or chill it for a couple of hours if you want to serve it cold.

Restaurant Recipes - You Can Buy Them at the Grocery Store Or Make Them Yourself

If you have been to the grocery store lately you will have seen that a lot of the famous restaurants now sell boxed or frozen versions of your favorite restaurant recipes. Macaroni Grill for example has boxed pasta dishes in they pasta isle, T.G.I. Friday's has frozen meals, On The Border serves their appetizers and so on.

Honestly I have tried a lot of these quick and easy meal solutions to your favorite restaurant recipes. Although they are still quite tasty they still do not compare to the cuisine that you would enjoy at your favorite restaurant.

Along with the close but not exact taste the portion size becomes a problem. If you go to T.G.I. Friday's and order their Firecracker Peppercorn Shrimp Skillet you will pay about $12. If you buy the frozen bag it will cost you $6, half the price seems like a good deal until you open the bag. Their isn't enough to fill up more then one person, so you would have to purchase 2-4 bags depending on the size of your family. Sure this is a huge discount compared to going out to eat, but you are still spending a great deal of money just to enjoy your favorite restaurant copycat recipe.

Most restaurant recipes can be created at home for a fraction of the cost it would either cost you to go out to eat, or buy the pre-made brand at you local grocery store. If you went to Red Lobster and ordered their Shrimp Scampi you can expect to spend $13 not including the tip, but if you make it at home you can expect to spend about $1 per serving.

To make Red Lobster's Shrimp Scampi is a quick and easy copycat recipe. It includes a pound of shrimp, white wine, butter, garlic and linguine noodles. Most of these ingredients are staples in any kitchen pantry. A pound of shrimp from the local seafood counter at a grocery store will run you around $6 for the jumbo shrimp, a box of noodles around $1 and the rest is probably in your pantry. You can easily prepare this recipe at home for minimal cost and the same restaurant recipe taste funny.

The most imitated restaurant recipes are so simple to prepare as usual weeknight recipe. As I said, most ingredients are already in your pantry, so no additional cost is required. If you have a particular recipe from one of your favorite restaurants love, find the recipe online and then try to make your own kitchen, I'm sure it will not be disappointed. Secret Restaurant Recipes is possible for a simple family dinner night, or for usenight and day with that special someone. Make your favorite recipe, with candlelight and not worry about time that someone special instead of the account at the end of the evening.

If you are unfamiliar with Dim Sum, it is small dishes of Chinese food served as snacks. This Miami restaurant has been around for years and usually is packed on Saturdays and Sundays for lunch so try to get there early. Dim Sum is not served for dinner, buy you can still order some exotic dishes.

The Menu: In addition to the traditional Chinese restaurant dishes, you can order exotic dishes such as Sliced Abalone with sea cucumber in a hot clay pot or Braised Sea Cucumber with spicy sauce.

Red Lantern, in Coconut Grove, is our favorite Chinese delivery restaurant in Miami. When Red Lantern says that the delivery will take 30-40 minutes, the food usually arrives under 20 minutes. If you do not live in the Grove, delivery may be limited and may take longer.

The Menu: We recommend the Fried Noodle Dish ($10) with chicken or pork and the General Tso's Chicken ($11).

New Chinatown, in Sunset/South Miami, is our favorite Chinese dinner and a movie restaurant in Miami. New Chinatown, located on the corner of Sunset Place, is close to shopping and the movies. New Chinatown prepares Szechuan, Mandarin, and Cantonese dishes, so it should not be too difficult to find something you like.

The Menu: From the Cantonese menu, we recommend the Tree Treasures ($20), which is lightly fried scallops, shrimp and calamari mixed with garlic and broccoli. From the Mandarin menu, you will find more typical dishes such as Kung Pao and Orange chicken; however, the Ta-Chien Chicken ($12) is worth a try. It is diced chicken with stir fried mushrooms, baby corn and a special sauce.

China Grill, in South Beach, is our favorite upscale Chinese restaurant in Miami. China Grill, the Sister restaurant to New York's China Grill, has a spectacular atmosphere created from the Egyptian limestone, wraparound bar, and wood floors. There is even an ice-top sushi bar and bar that wraps around the restaurant.

A Simple Jewish Meal

Now that it is fall cooking is more of a production. Meals need to be hot to warm your family up after a long day in the cold. However, because you spend you day working and taking care of your family you may not always be in the mood to cook a large hot meal. Fortunately, a simple Jewish meal prepared with love can be just as satisfying as a gourmet meal that took hours to prepare.

The Main Course

When planning a simple meal you will want to start with the main course. Since you want to simplify the cooking process you will want to create a single dish that has all the food groups in its ingredients. Stews and casseroles are two dishes that help you to create well rounded meals in a single pot or dish.

Jewish cuisine is filled with traditional Jewish recipes for great casseroles, especially noodle casseroles. Noodle casseroles are easy to prepare, as they are what I like to call a dump and cook recipe. All you do is dump the ingredients into a casserole and pop it in the oven to cook. A basic noodle casserole, that is intended to be served as a main dish, will contain noodles, vegetables, a dairy base and some form of meat. For example, if you want to make a tuna noodle casserole you will need noodles, a can of tuna, cheese, milk, a bag of mixed vegetables and a basic rue made from butter and flour.

Another easy to make one pot meal is a stew. Stews work well for working Jewish parents as they can be started in a crock pot in the morning and left to cook safely in the crockpot through the day, and by the time that you get home form work/school, the stew is ready. To prepare a stew you will need brother (chicken, vegetable or beef), meat and vegetables. You will want to skin and cube your vegetables in large enough pieces so that they survive the long cooking time. If you have young children, you can cut down the vegetables when they are served to make them easier for them to eat.

Dessert

For an easy dessert there are several options that you can go with. You can prepare a cake mix and top it with berries or warmed fruit preserves, or you can simply serve a baked apple. Baked apples are a great and inexpensive dessert to make. All you have to do is to core your favorite type of apple, place it in a cake pan filled with about a half inch of water, sprinkle the apples with a tablespoon of sugar and a tablespoon of cinnamon and bake at 350 degrees until soft. When you serve the apply sprinkle with a little more sugar and cinnamon.

Cooking Just For Fun

Is cooking more of a chore for you than a craft? Maybe it's time you changed your approach. It's a proven fact that your cooking is much better when you enjoy what you're doing, and you can bet your family can taste the difference. Just a few twists can totally revive your interest in cooking. Get back your drive by trying these few quick tricks.

Get out the grill. Everyone likes a good barbecue, and hosting a fun backyard party is a great way to get everyone together. Pretty much everything can be put on the grill-meat, veggies, even some fruits and cheese. Experiment with different marinades and sauces. Not sure what to serve? Put an assortment of foods on the table and let everyone make their own.

Decorate some cupcakes. Sometimes what you lack is just a bit of creativity. If you have a sweet tooth and some spare ingredients, whip up a quick batch of frosting and decorate some store-bought cupcakes. Go with any design you want-animals, flowers, bugs, cars, you name it. Get your kids to help out and make it a fun afternoon hobby.

Make a quick dessert. You'll be surprised at how creative people can get by making desserts on a whim. Most desserts take only a half hour or less and can be made with leftover ingredients. Next time you make dinner, take an extra 15 minutes to fix dessert and make your meal a little sweeter.

Put a twist on pasta recipes. The great thing about pasta is the range of possibilities it offers. You can make your sauces thick and creamy, sweet, spicy, smooth, chunky... you get the idea. Take an old favorite and add a little something to make it different. Sometimes just trying out a new noodle shape can get your creative juices flowing!

Invent a side dish. There's an endless possibility of food combinations just waiting to be tried. Mix together some of your favorite ingredients and you just might come up with a new favorite dish. Don't feel pressured to make a masterpiece; just keep experimenting and have fun while doing it.

Four of the Best Cuisines in the World

The world has an infinite variety of cuisines to offer. Some may go down with your palate, some might not. It is virtually impossible to sample the food that every region or culture might have to offer. After all, they say that food habits change every 100 miles. But there are a few cuisines you must sample before you die, and the ones in this list would rank among the very best:

1. Italian
Who hasn't tasted Italian cuisine? The world's favorite food, the Pizza, is an Italian staple. Another famous Italian export to the world is Pasta. A hearty, healthy cuisine with plenty of meats, fresh vegetables, Italian cuisine is among the most popular in the world. Indeed, our food palate would be poorer without it.

2. French
The French have a reputation for being connoisseurs of good food. France is traditionally considered the food capital of the world, with the highest number of Michelin ranked restaurants dotting its cities. This cuisine is routinely classified as "high cooking" and features plenty of cheeses, exotic ingredients (such as foie gras and frog legs), and inventive methods of cooking. Accompany French food with a good wine, and you have the prefect pairing for a great evening.

3. Indian
Indian food has exploded in popularity in the past few decades. This ancient cuisine, practised for over 3000 years, has taken in elements from different cultures and modified itself over the years. The North Indian cuisine is especially famous, and features heavy, spicy curries, delicately cooked vegetables, and spicy meats. A very hearty cuisine indeed.

4. Chinese
Chinese cuisine has to be among the world's most popular cuisine. Every city has several Chinese restaurants. It is an easily modified cuisine that can be easily adapted to suit local taste palates. In fact, you will be hard pressed to find authentic Chinese food outside China, so popular and so heavily modified is this cuisine. Chinese food is characterized by sweet, sour and pungent flavors, and feature plenty of chicken, rice, and fresh vegetables that are sparsely cooked.

Classic Clam Chowder

Broth and clams are contained in the several types of chowders and in making clam chowder you will need the basics like onions and potatoes occasionally sautéed from salt pork drippings. You will need very few types of vegetables such as small carrot strips which are primarily used for color. Celery is also frequently used. For garnish and flavoring, sometimes bay leaves are used.

In the olden days the reason why clams were used was because they were readily available and they were easy to collect. From what used to be a year round requirement for Catholics, making clam chowder was usually done on Fridays in restaurants purposely as an option for sea foods especially for people not taking meat during lent. In England for example, clam chowder was made using bacon or salt pork, hardtack or flour, onion, clams and potatoes.

A 1939 bill in England made it illegal to add tomato in clam chowder. In Manhattan it was a different affair since tomato was used for flavor and for the red color. It was referred to as New York clam chowder in the 1890s. It was later in the 1900s that the name Manhattan clam chowder was adopted from people in Maine. Making chowder has been done since the 18th century, the origin being in England.

Being a traditional of their cuisine, it is said that the idea of adding tomatoes in place of milk was introduced by the Portuguese who had migrated from the Rhodes Island. There are many types of chowders depending on the making clam chowder style that you prefer to use. There are restaurants which are known to have their own unique chowders that do not imitate any type of chowder from any country.

What they use to serve with the chowder is hexagonal small oyster crackers or saltine crackers. In the San Francisco it is served with sourdough bread bowls. Regions which have their own unique ways of making chowder are Rhodes Island's clam chowder which has a clear broth, Minorca clam chowder which has a tomato broth base, Outer Banks etc.

Some of the ingredients that are used in making classic chowder, you require olive oil, 1/2 cup white wine, 1/2 cup lemon juice, 3 cups water, 2 cups of heavy cream.

The Other ingredients that you need include 2 smashed garlic cloves, 1 chopped onion, 1 bay leaf, 6 sprigs fresh thyme, 4 slices chopped bacon, 2 Idaho peeled and diced potatoes, 2 minced garlic cloves, common cracker recipe follows, salt and freshly ground black pepper.

Travel in Colombia - Six Succulent Soups of the South in Colombia

Exotic Foods Abound in Colombia

Although "exotic" foods abound in Colombia, the most succulent, flavorful offerings are its locally-made soups. One of the many pleasures of living and teaching English as a foreign language abroad is the opportunity to sample and savor a unique plethora of foods. From chilly Bogotá, Colombia's mountain-located capitol city, through aromatic seafood soups from the Pacific coast to the steaming goodness of Cali, Salsa music capitol of Colombia, here are some of the country's best soups.

Here Are Six Succulent Soups from Colombia

" Sancocho de Gallina

The national dish of Colombia, this hearty soup is made with a whole stewed chicken or rooster including the feet. Added in are yucca, yellow plantain, potatoes, carrots, onions, garlic, and seasonings. It's served with a bed of steaming white rice and fresh slices of locally-grown avocado.

" Mondongo

A truly hearty meal in which cubes of tripe are cooked until tender, then added into a stew of vegetables like yucca, yellow plantain, potatoes, carrots, onions, garlic, peas and seasonings. It's also often served with a bed of steaming white rice. A cold, locally-brewed beer goes well with this too.

" Ajiaco

As creamy a soup as they get, this specialty of Bogotá is made with tender chicken breast, two varieties of potatoes; small yellow potatoes and white potatoes, yucca and lots of fresh whole milk to give it its characteristic creamy texture and light color. It's served with Guasca (a green, leafy vegetable) and Alcaparras (capers) and is a taste sensation you'll likely never forget.

" Changua

Another milk-based soup commonly served in Bogotá and environs for breakfast. It is simple with beef broth, milk, and eggs as its main ingredients. Parsley is often sprinkled on top for added color and bouquet.

" Sancocho de Pescado

Along Colombia's Atlantic and Pacific coasts, this full version of the national dish is made with several types of seafood instead of chicken. Fried slices of yellow or green plantain accompany this dish as does white rice cooked in coconut milk instead of water. Sliced fresh avocado, tomato and fried fish are often piled on a platter next to the bowl of soup which is actually more like a stew.

" Caldo de Costillas

The third highest capitol city in the world, Bogotá can get quite chilly mornings and late evenings year-round. For a great chilly morning pick-me-up you can't do better than a bowl of this simple beef broth cooked with white potatoes and a healthy slab of meaty beef rib thrown in, always still on the bone. Bread or arepa (a thick flour tortilla-like bread) on the side help fuel you up for a busy day in Colombia's capitol city. Add a hot cup of Colombia's rich, mild coffee and you're good to go for the day.

Feeling Adventuresome?

If you're feeling adventuresome, then by all means try the "Hormigas Culonas" ants from Santander, the flaky smoked shark called "Tollo", or dip into a stew of Iguana meat. But for me, I'll savor the flavors of these wonderful broths and hearty meals served with rice, fried plantain or a flat, toasted "arepa". Any way you try them, they're all simply delicious. Whether it's "exotic" foods or one of the locally-made traditional soups, your taste buds are in for a treat when you come to Colombia.

Unusual Soup Recipes For When You Fancy Something Different

We all love classic soup recipes and these include French onion, chicken noodle and tomato. Sometimes though, it is nice to make something a bit different.

If you are having guests over or if you want to surprise your family, you might like to try a sweet fruit soup as an appetizer or dessert, a thick stew-like soup or a spicy soup. Soup can be an appetizer or an entree and it makes a hearty lunch or a great dinner.

Many Types of Soups

What about making a pea and fennel mixture, a root vegetable combo or a sweet cherry soup? The sky is the limit when it comes to soup recipes and you might like to tweak an old classic, such as spicing up a chicken noodle soup or making a chilled tomato soup rather than a hot one. You can try some international soup recipes too, if you are feeling adventurous.

Soup recipes are a great way of using up vegetables, which are past their prime. If you are making a carrot and orange soup, you might want to add some pumpkin, yam, or mushrooms to it. You can mix and match ingredients where soups are concerned and you might even discover a new soup recipe, which becomes a family favorite.

Pineapple and Cashew Cream Soup Recipe

This tasty and unusual soup recipe makes enough to serve a family of four. The potatoes, onion, and vegetable broth give this soup a nice wholesome tasting base and the pineapple, nuts, and cream add a tropical flavor. This is a really nice winter warmer of a soup and it is a great recipe to serve in the fall or winter.

What you will need:

1 cup chopped cashews
1 finely chopped red onion
5 fl oz half-and-half
1 cup pineapple chunks, drained
1/2 cup bourbon whisky
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon cornstarch mixed with 2 teaspoons water
4 gold potatoes, peeled and cubed
2 tablespoons butter
2 cups strong vegetable broth
2 minced garlic cloves
Chopped fresh parsley, to garnish

How to make it:

Melt the butter over a low medium heat in a skillet, and then add the chopped red onion, tossing well to coat. Saute the onions gently until they are soft. This will take about three minutes. Stir them often.

Add the garlic and saute for another two minutes. Put the garlic and onions in a food processor or blender with the cashews and process until smooth.

Transfer this puree into a big saucepan, and then add the potatoes, pineapple chunks, bourbon, half-and-half, broth, salt and pepper. Bring the soup to a boil, and then turn the heat down to medium.

Let the soup simmer for 15 minutes or until the potatoes are soft. Add the water and cornstarch mixture to the soup and keep stirring it until it thickens. Serve the soup garnished with the fresh parsley and perhaps some garlic bread.
