Ingredients:
3-cups Chicken broth
2-medium Potatoes, baked and cubed (leave skin on potato)
1-medium Onion, finely chopped
2-tablespoons Butter
3-medium Carrots, shredded
2-cups Chicken, cooked and chopped
¼-cup All purpose flour
1-cup Milk
8-ounces Cream Cheese
4-ounces Cheddar cheese, shredded
Salt and pepper to taste
Instructions:
Sauté the onion in butter until tender over medium heat in a large saucepan. Add chicken broth, carrots and potatoes. Bring to a boil; reduce heat; cover and simmer for 30 minutes. Add the chicken, salt and pepper and let simmer for about 10 minutes.
In a medium bowl combine the flour and milk until smooth; add to the vegetable mixture. Bring to a boil; cook and stir frequently for about 5 minutes. Reduce heat; add the cream cheese; cook and stir until melted. Top with shredded cheddar cheese right before serving.
Makes 8 servings
Note: This is great ham, steak or turkey. Serve this with some nice hot French bread, corn bread, or crackers. I have cooked this with frozen green peas instead of the carrots and it's a really good change for those of you who are pea lovers. Serve this with a nice big salad and you've got a meal.
