If you are looking for an internationally famous food then it is none other than Thai Food. Creamy Chicken & Cheese Soup

Ingredients:

3-cups Chicken broth

2-medium Potatoes, baked and cubed (leave skin on potato)

1-medium Onion, finely chopped

2-tablespoons Butter

3-medium Carrots, shredded

2-cups Chicken, cooked and chopped

¼-cup All purpose flour

1-cup Milk

8-ounces Cream Cheese

4-ounces Cheddar cheese, shredded

Salt and pepper to taste

Instructions:

Sauté the onion in butter until tender over medium heat in a large saucepan. Add chicken broth, carrots and potatoes. Bring to a boil; reduce heat; cover and simmer for 30 minutes. Add the chicken, salt and pepper and let simmer for about 10 minutes.

In a medium bowl combine the flour and milk until smooth; add to the vegetable mixture. Bring to a boil; cook and stir frequently for about 5 minutes. Reduce heat; add the cream cheese; cook and stir until melted. Top with shredded cheddar cheese right before serving.

Makes 8 servings

Note: This is great ham, steak or turkey. Serve this with some nice hot French bread, corn bread, or crackers. I have cooked this with frozen green peas instead of the carrots and it's a really good change for those of you who are pea lovers. Serve this with a nice big salad and you've got a meal.

Singapore Famous Food Recipes

Singapore is a melting pot bubbling over with tourists, inhabitants and expatriates from all parts of the world, and these people naturally have diverse eating habits. Through the ages, the Chinese, Malay, Indians and the foreigners (westerners) have cast their influence on Singapore's food recipes and there is no doubt that Singapore is a food lovers' paradise.

Singaporeans love to eat out and there is a feast of multicultural cuisine waiting for them in restaurants and especially in hawker centers and food courts. Here is a list of the major types of foods you can feast on in Singapore:

1. Malaysian Food: Malaysian food, also known as Malay food, is a popular in Singapore simply because Malaysia is Singapore's neighbor and there are a whole lot of Malaysians living there; Spicy Malaysian gravies are laced with belachan, which is made from baby shrimps and the Malaysian desserts are usually based on coconut milk, palm sugar and freshly grated coconut. Then, of course, there are the rice and noodles too, which any Malaysian cannot live without. All these go to make an exotic eating experience. Some Malaysian food you must try out in Singapore: Laksa (coconut-based gravies) and Satay (grilled and skewered meat).

2. Chinese Food: The Chinese have been in Singapore since the last seven centuries and their influence on Singapore's food recipes is authoritative. Chinese food can be subtle and neutral (Cantonese), or it can be fiery (Szechuan). Rice is a staple food in any Chinese dish and you can try out the following dishes to get a flavor of the Chinese influence: Shark fin soup, spring rolls (Cantonese - subtle taste); Fried Hokkien Mee (vermicelli, noodles, chili gravy, garlic, prawns, pork and everything else); and, Teochew food such as steamed fish and braised duck.

3. Indian Food: South Indians (mostly Tamilians) migrated to Singapore in the 1940s and their influence on Singaporean cuisine is undeniable. In fact there is an area in Singapore (around Serangoon Road), which is know as Little India. You must try out the south Indian Dosas, Idlis, Vadas that are served with spicy gravy and chutneys as well as the north Indian Tandoori Chicken (chicken smothered with a spicy paste and cooked in a clay oven).

4. Nyonya Food: Nyonyas are half-Malay, half-Chinese people who cook very hot and spicy food loaded with ginger and turmeric. Their recipes are creative and the cooking methods are elaborate. Some of the famous Nyonya dishes you must savor are: Enche kabin (small chicken pieces marinated in soy and oyster sauce) and Chicken Kapitan (chicken curry made using tamarind juice, candlenut, fresh turmeric root and belachan (shrimp paste)).

These apart, Singapore also offers western cuisine comprising of American, British, and Italian dishes. There are fast food centers, food courts, hawker centers, restaurants and you-name-it. As we said earlier, Singapore's food recipes cater to all kinds of food lovers. Bon Appetit.

Cheesecake is a Divine Treat For Holiday Get-Togethers

This is the season for holiday parties, what with Thanksgiving and Christmas near. There will be numerous get-togethers with friends, acquaintances, and family. Eating is usually the activity involved in such events. Often times, I am asked to contribute with a covered dish. The covered dish I prefer taking is cheesecake.

Cheesecake is an easy take-along treat that is simple to serve and eat. Its delicious flavor compliments all other foods, regardless of the theme. It is not-too-sweet; not-too-tart and is the perfect go-with item. It stores either frozen or refrigerated for weeks or days well in advance of the party; thus, eliminating the last minute rush to "whip something up".

There are several kinds of cheesecake from which to choose. New York style is probably the most familiar. It is a plain cheesecake which is rich and scrumptious plain or can be "dressed up" with a simple fruit topping of choice or a dab of jam. Just picture how festive New York style cheesecake can look with a dollop of red raspberry jam or with a single chocolate-dipped strawberry complete with green stem placed on top. What a beautiful and appetizing treat that presents!

Chocolate cheesecake is a personal favorite of mine, which oozes decadent chocolaty goodness with each mouthful. It can be decorated with shavings from a chocolate candy bar or with a thin stream of chocolate syrup tastefully drizzled over it. It is even more delicious with a spray of Zip Whip whipped cream. Chocolate cheesecake satisfies everyone's sweet tooth.

For the more discerning palate, try pumpkin cheesecake for the holidays. Its spicy, pungent flavor is truly reminiscent of holiday eating. Pumpkin cheesecake is such a unique choice, it will make a very flavorful impression. Simply serve pumpkin cheesecake with a few shakes of cinnamon sugar for a truly incredible dessert option.

Of course, there are other cheesecake flavors from which to choose and the serving options are as endless and creative as your imagination allows. The Best Soup to Make For Kids

Soup is a delicious food and there are lots of different types of soups you can make. When you make soup from scratch, the soup ends up containing all the goodness from the vegetables. If you boil vegetables, you usually throw the water out, but with soup the goodness stays in the soup, making it a very nutritious dish.

Kids can be fussy eaters so if you want to get them to eat vegetables, you might have to puree the soup, else they will pick out the bits they do not like. Pumpkin soup is a wonderful recipe for kids because pumpkin is naturally sweet and juicy. Some pumpkin soup recipes have added sugar, honey, or cream and the idea of a sweet tasting soup is something that will capture your child's interest.

Making Soup an Attractive Meal

Other popular soups for kids include tomato soup, chicken noodle soup, carrot and orange soup or anything with their favorite cartoon character on the packet. The following recipe is designed to appeal to adults and kids. The pumpkin soup contains butter, flour, a little sugar, and milk for creaminess. The onion adds nutrients and the pumpkin adds both sweetness and vitamins. If you puree the soup in a blender, do it in batches. Pureeing the soup is optional though, but a good way to hide the vegetables.

Your kids are guaranteed to clean their bowls if you serve them this delicious pumpkin soup. The following recipe makes enough to serve four people. It does tend to get quite thick, so just add more milk if that happens.

How to Make an Easy Pumpkin Soup Recipe

What you will need:

3 tablespoons flour
2 tablespoons butter
1 teaspoon sugar
1 onion, chopped
2 cups milk
1 lb pumpkin, cubed
Salt and freshly ground black pepper, to taste

How to make it:

Boil the pumpkin cubes until they are very soft, and then drain away the water. Melt the butter in a pan and fry the onion in it, over a medium heat, until it is soft. Add the sugar, flour and some salt and pepper and cook for 5 minutes.

Add the milk slowly, stirring all the time. Keep cooking over a low heat, stirring the soup until it is hot and thick. Add the pumpkin and simmer the soup for 5 minutes, then puree it in a blender and serve hot.

Family Favorite Mexican Crock Pot Recipes

There are so many different delicious crock pot recipes available now days. You can feed your family well, and with variety too. If your family loves Mexican dishes, but you're tired of the same old tacos for dinner, try one of our simple Mexican recipes. Start your meal in the morning and come home to an easy evening of dinner with the family.

These easy Mexican style crock pot recipes are ones your family will love and ask for over and over again. There are three different types: Beef, Chicken and Pasta crock pot recipes listed below. Try one this week and treat your family and yourself to a great meal together.

Mexican Shredded Beef Crock Pot Recipe

4 lbs chuck roast

1 teaspoon salt

1 teaspoon black pepper

1 onion, chopped

1 teaspoon chili powder

1 teaspoon garlic powder

2 - 4 oz cans green chilies, undrained

3/4 cup hot pepper sauce or to taste

Water

Season chuck roast with salt and pepper. Place in crock pot. Mix together remaining ingredients except water, and spoon over meat. Pour water down along the sides of the crock pot until roast is 1/3 covered. Cover it and cook on high 6 hours. Reduce to low 2-4 hours, until meat falls apart. Shred with forks if needed. Sauce can be thickened with a little flour. This is perfect as a burrito dinner or on buns.

Mexican Chicken Stew Crock Pot Recipe

2 lbs skinless boneless chicken breasts cut into 1 inch pieces

4 medium russet potatoes, peeled and cut small

1 -15 oz can mild salsa

1 -4 oz can diced green chilies

1 -1 ¼ oz package taco seasoning mix

1 -8 oz can tomato sauce

Mix all ingredients together in a crock pot, cook 8 hours on low. Serve with warm flour tortillas, and corn or add it to the finished stew.

Mexican Macaroni and Cheese Crock Pot Recipe

5 to 6 cups hot cooked macaroni, drained -12 oz dry

2 tbs butter

1 can 12 oz evaporated milk

1 can nacho cheese soup

2 cups shredded Mexican Cheddar cheese

1 - 4 oz can chopped green chilies

1 - 4 oz can sliced black olives

3/4 cup thick medium salsa

salt and pepper to taste

Grease your crock pot lightly. Toss the hot macaroni with butter; add remaining ingredients and mix well. Cover and cook on low for 3 to 4 hours.

Spicy Crock Pot Recipes - 2 Mexican Recipes For the Crock Pot

The crock pot is great for cooking authentic Mexican food recipes, especially spicy ones. This is because slow cooking brings out the flavors of every ingredient and makes meals taste incredible. When you are using chilies and strong flavored ingredients to make traditional Mexican foods, you will want the flavors to develop and combine, because the finished dish will taste amazing.

Serve with cheese-flavored Doritos or corn chips.

You can sprinkle some grated Mexican blend cheese or cheddar over it if you like. Since all the ingredients for this recipe are canned, except for the hamburger meat, you can stock up on the ingredients if you enjoy this dish and make it whenever you fancy. The longer you cook it for, the stronger the flavors become but the ingredients simply need to be heated through so a couple of hours on "high" is fine. If you are going out, cook it on "low" but give it twice the time.

How to Make Mexican Crockpot Pork Roast

Another great recipe is to cook a pork roast in the slow cooker on "low" for eight hours or until it is very tender. Transfer it to a glass baking dish. Combine two cups of the broth from the roast with a couple of tablespoons of chili powder, a tablespoon of flour and some salt and pepper. Pour this mixture over the pork roast and bake it at 350 degrees F for ten minutes.

This is a fantastic recipe and pork roast will be really tender and flavorful from the slow cooking. The chili powder livens it up. You can serve this crockpot pork roast with anything you want but it goes well with mashed potatoes or French fries. This is a great meal to cook if you will be out all day or very busy, because it cooks itself for eight hours and then you just have to bake it for ten minutes to crisp it up before serving it.

Homemade Ginger Snap Cookies Recipe

Old fashioned ginger snaps have a chewy center and are full of spicy ginger flavor that goes perfectly with a glass of raw goats or cows milk. The spices fill your kitchen and home with the smell of Christmas while the cookies are baking. Ginger has antioxidants and is an herbal aid for the digestion. What better way to help your digestive system than eating ginger snap cookies?

Homemade Ginger Snap Cookies Recipe

1 cup packed raw dark brown sugar
¾ cup lard from pastured pigs
¼ cup blackstrap molasses
1 egg from pastured hens
2 ¼ cups unbleached flour
2 teaspoons baking soda
1 teaspoon up to 1 tablespoon ginger
1 teaspoon cinnamon
½ teaspoon up to 1 teaspoon cloves
¼ teaspoon sea salt
Dehydrated cane sugar

Step 1: Mix together the brown sugar, lard, molasses and egg until creamy.

Step 2: In another bowl, mix together the flour, baking soda, ginger, cinnamon, cloves and sea salt. Stir a little at a time into the sugar mixture until well blended. Cover and refrigerate 1 hour or more.

Step 3: Preheat oven to 375°.

Step 4: Using a teaspoon, scoop up dough into rounded balls and dip into the dehydrated cane sugar. Place the balls of dough, sugar side up, onto a greased (with lard) cookie sheet. Bake 10-12 minutes just until set. Remove from the cookie sheet onto a platter and let cool.

These cookies are chewy and delicious. And they contain the natural sugars and molasses that still have the minerals and vitamins intact, and a healthy fat that nourishes our bodies. The spices not only promote health, they are delicious and make your house smell better than using candles.

Raw Stir Fried Noodles

1 1/2 c cabbage shredded 3 sheets raw nori shredded or 1 T dulse flakes 1 T pine nuts 1 small tomato chopped 16 oz kelp noodles 1/2 c sprouted daikon raddish (makes it spicy, optional) 1 T chopped ginger 1/2 c chopped basil Mix and set aside. Sauce Ingredients: 3 T Sesame seeds 5 T apple cider vinegar 2 T pumpkin seeds 4 T Braggs liquid aminos or raw soy sauce (3 T if you prefer it less salty) juice of 1 orange rind of 1 orange 1 T dulse flakes or 1 sheet raw nori shredded 2 T each parsely and basil leaves Mix and blend. Mak's Noodle Limited is another Wellington Street icon... Best known for its Won Ton Noodle, which some say is the best in Hong Kong, this humble eatery doesn't have much in the way of decor, but the place is tidy enough, the food is great (although the portions are slightly small) and the prices are not too bad...

Tsim Chai (Jim chai) Noodle, also on Wellington Street, is Mak's mythological competitor... This humble Cantonese food joint draws people from far and wide for its Wonton noodle soup, that comes with large and plumpy wonton dumplings, full with shrimps... Quite expectedly, there's nothing much here in the way of glitz and glamour, but the food is great and the prices are very moderate... So who can ask for anything more?

Kau Kee Noodles - Tucked on tiny Gough Street, just a minute stroll from the SoHo, humble Kau Kee Noodles has made a name for itself as a Hong Kong culinary emblem, after serving some of the best Beef Brisket in town for the last who knows how many years... You can have your Beef Brisket in a plain meaty broth or in a curry broth, and it comes with or without noodles (their noodles are really nice though, so maybe you should give them a try...) Almost needless to say, it's just a small corner shop, so do not expect any "romantic ambience"... Lunchtime queue can be a pain, so try to come later if you can.

Prawn noodle shop in Wanchai specializes in Singaporean-Malaysian Prawn noodle soup. Their menu has 3 different types of soup-base: Spicy prawn, Spicy curry laksa and Pork with chicken... After deciding which soup-base are you going for, you can "beef it up" with extras like: seafood, prawns, chicken, fishball, meatball, squid ball, fish cake, bean curd, and what have you... The place is very busy, so maybe you should try to avoid lunchtime.

Chee Kee is a Causeway Bay institution, particularly known for its Beef brisket noodle in soup and Wonton with noodle in soup. The menu doesn't have a great variety to choose from, but whatever is there, is likely to be good.Located on Percival Street in Causeway Bay (Can be accessed via exit A of MTR Causeway Bay), Open from before lunch until almost midnight

Ho Hung Kee, also in Causeway Bay, is known to have some of the most authentic wonton noodles in Hong Kong. In addition to its outstanding Wonton with noodles in soup, the restaurant serves other authentic Cantonese favorites, such as Shredded pork noodle, Beef chow fun (a Cantonese dish of stir-fry beef with wide rice-noodles and bean sprouts), Ee Fu Noodles and some scrumptious Congees. Located on 2 Sharp Street East in Causeway Bay, just a heartbeat from Lee Theatre Plaza. Open daily, from before lunch to almost 11pm

Almost 1 million people pay homage to the highly revered deity, Lord Murugan during the 3-day long festival. Thaipusam falls on the tenth day of the month of Thai in the Hindu Almanac and that would usually be in late January or early February.

Crockpot Cooking For Busy People

Crockpot cooking is great for folks too busy to spend hours slaving in a hot kitchen, try these easy ideas for getting grub on the table. They are sure to please the family for minimal exertion on your part.


Yankee Pot Roast Mmmm, everyone loves pot roast! This is super easy, dump a pot roast in a crock pot, small red potatoes are a good match with baby carrots and pearl onions. I use Worcestershire sauce to season the meat about a quarter of a cup should do. The longer it cooks, the softer the meat will be. Just don't forget to remove the vegetables when they are done so they don't go to mush.

Corned Beef and cabbage Again, carrots and baby red spuds complement the cabbage and you will guaranteed never have softer, more tender corned beef in your life. Salt and pepper is all that is needed to season this dish, give it about eight hours to cook. Corned beef brisket is a pretty tough cut and does take some time to cook, but it is well worth the wait. A St. Patrick's Day favorite, but great year round.

Beef Soup Nothing makes better beef soup than a Crockpot. Stew meat and Worcestershire sauce to season, with some salt and pepper to boot. I add peas, celery, corn, small white spuds, pearl onions, carrots, and sliced green beans. A large pot of this can last for days, and is tastier as it goes. Just make sure that meat gets to simmer for enough time, stew meat is notoriously rough to chew.

Chicken Fricassee This is the kid's favorite, and I remember my father making it for us when we where children. It takes a little effort, mainly the boning of the chicken, but is well worth it. I roast the chicken in the Crockpot until it gets soft, and then put just the meat, white and dark meat both, back in the Crockpot. Add carrots, celery, onions, and egg noodles last. The egg noodles will cook fairly fast. If you like the sauce thicker, you can add a can of cream of chicken soup.

Chicken Mexican One can of enchilada sauce, one chopped onion, a jar of salsa, and three chicken breasts. I like a small can of chilies too, the green ones. But nothing too spicy or it will over power the chicken. Serve on the side sour cream and shredded cheese, with warm tortillas. The flour ones tend to work better than the corn ones as far as flavor goes.

Tantalize Your Taste Buds in Chicago

While taking a break from required writing, I began to reminisce about a recent trip to Chicago. The growling of my tummy reminded me I've neglected to eat today and it's past four o'clock in the afternoon! That's not sensible at all. Let me tell you about dining in Chicago before I get a bite to eat.

While in Chicago, I had the exciting task of deciding where I was going to eat. It's my guess that just about every American and many foreigners have heard about dining in Chicagoland. If you've never had a deep dish pizza made in Chicago, you're missing a treat! I say this and I am not a big pizza lover. I have pizza fewer than six times a year unless I'm in Chicago more often than that. I must include New York hand-tossed pizza, too.

For years, four girlfriends and I would make summer vacation plans around The Taste of Chicago held annually, just to get a sampling of the scrumptious cuisine offered by The Windy City's infamous and not so famous restaurants. There is food to satisfy just about every craving one can have. Chicago boasts that this food festival is the largest of its kind in the world. I believe them.

Just in case you're visiting Chi-town this summer or future plans take you there, the following restaurants are just a sampling of restaurants in Chicago. Some are national and perhaps international franchises but others are homegrown and owned. I typically stay within walking distance of Michigan Avenue if not on Michigan Avenue; therefore, these restaurants are within walking distance of that area. Some are also a reasonable cab fare away. The list isn't comprehensive but it will satisfy your appetite while pleasing your palate.

Bring water or stock to boil in a sauce pan over medium heat then add lemongrass, galangal and lime leaves. Cook until fragrant. Add all the seafood except the shrimp or prawns (DO NOT STIR) and wait until they change color then add the shrimp or prawns. Recipes Of Romanian Cuisine - A Balm For Your Senses

Romanians have a particular way of cooking, and their food is absolutely delicious if you get it in the right place and it is cooked the right way. Romanian restaurants can be found nowadays all over the world and they serve the best traditional Romanian food made by Romanian cooks after special recipes of Romanian cuisine.

Before big important holidays like Christmas and Easter or others, Romanians have a fasting period, which means no animal products are allowed on the table. It is not hard at all and the results will be absolutely to your satisfaction. Dare to taste the Romanian products and if you ever have the chance, visit that beautiful country.

Not only the food, but also the attitude of the Romanians is one to enjoy - they are very hospitable and generally have a positive attitude towards life itself. The surroundings, especially in the mountains and the sights are amazing and you can find nice restaurants all over the country. Plenty of food to enjoy, and it is delicious. You will have to be careful though because you might gain weight very fast.

Tasty Old Fashion, Economical Casserole Recipes

Wintertime is a great time for casseroles. It is a perfect time to use the oven as it can spread warmth throughout the house. The warmth, the delicious aroma wafting through the house, and you with your feet up while your meal cooks without your assistance! And one of the best things about casseroles is that they are economical. Here are two very different casserole recipes to add to your recipe box. This Spanish Rice Casserole is made with bulk sausage and rice. The Chinese Noodle Hamburger Casserole uses Chinese noodles and ground beef, as the name implies.

SPANISH RICE CASSEROLE

1 lb bulk sausage
1 1/2 cups uncooked rice
1 onion, chopped
2 beef bouillon cubes
2 cups boiling water
1 can tomatoes
3 tsp chili powder
1/2 tsp garlic powder
5 slices bacon, cut-up

Preheat oven to 350 degrees.

Cook sausage until brown; crumble and drain. Combine rice and onion; brown lightly in reserved drippings. Dissolve bouillon in boiling water. Combine sausage, rice mixture, bouillon, tomatoes, chili powder and garlic powder; mix well.

Spoon mixture into a greased casserole dish. Bake at 350 degrees for 20 minutes. Place bacon over the rice and bake another 35 minutes.

CHINESE NOODLE HAMBURGER CASSEROLE

1/4 cup butter
1 lb extra lean hamburger
1 cup chopped yellow onion
1 cup chopped celery
1 cup chopped green bell pepper
1 can condensed tomato soup
1 can condensed cream of mushroom soup
1 can Chinese noodles

Brown meat, onions, celery and bell pepper in a skillet in the butter. Add the soups and simmer for 30 minutes. Add Chinese noodles and mix well. Pour into a lightly buttered casserole dish and bake at 350 degrees for 30 minutes.

How to Make Spinach Lasagna

Lasagna is one of the best Italian meals invented. I love making it for my family, and having leftovers for weeks to come. It doesn't require that many ingredients or advanced cooking skills to make and it can be a little healthier than regular lasagna.

I like to use frozen chopped spinach. Call me lazy, but I've never tried fresh spinach. I'm sure it's much better, but I like to buy the ingredients long ahead of time and defrost when needed. If you also use frozen chopped spinach take it out of the freezer and put it into the refrigerator until it's thawed. Place it on a plate to catch the water as it thaws. You can also put it on your kitchen counter if you need it to thaw quickly, but use it right away.

There are a few other ingredients you'll need for this dish. Mince a few cloves of garlic depending on how much you love garlic. I really love it, so I use at least 10-12 cloves for a pan of lasagna. Next get a can of peeled tomatoes. Authentic Italian tomatoes are best, if you can find them. You'll also need some herbs and spices. Parsley, oregano, and other Italian seasonings are best. Add a few tablespoons to your lasagna to taste. Any lasagna noodles will do, you could mix it up with wheat or another variation. You'll also need about 4 cups of grated mozzarella cheese.

Mix together the garlic, tomatoes, drained spinach, 3 1/2 cups of cheese, and the spices in a large bowl. Save the last 1/2 cup of cheese to sprinkle on top. Spoon a thin layer of the mixture on the bottom of a large ungreased pan. Place a level of lasagna noodles, then place the mixture on top. Do this until you run out of noodles and mixture. Leave a little mixture to put over the last layer of noodles, then sprinkle the leftover cheese on top. You could also add grated Parmesan for a little extra taste.

Pour a few spoonfuls of water down each side and the corners to keep it moisturized. This will help keep the edges from becoming too dry. Place in a preheated oven at 350 degrees F for 45 minutes. Cover with tin foil for the first 45 minutes. Take the tinfoil off and make sure the edges aren't too dry, if they are add a few more spoonfuls of water. Cook for 15-20 minutes longer uncovered until top is slightly crispy. Serve with steamed vegetables and garlic bread for a great meal. This is a delicious and easy recipe that you'll enjoy making for years to come.

Red Hot & Spicy Lobster Tails Recipe - Who Says This Gourmet Seafood Favorite Can't Pack Some Heat?

This bold, spicy, and succulent lobster tails dish is beautiful to look at, and even better to eat. It is gourmet food with a Latin flare. Guests can adjust the heat to their liking by drizzling more or less of the hot and spicy butter sauce on top of the lobster tails. But even those with tender mouths will enjoy the layers of flavors the sauce, spooned into the shell beneath each tail, will bring to this dish.

This lobster tail dish can serve as an appetizer for a party or special occasion, or a light entree as part of a larger meal.

8 (4- to 6-inch-long) rock lobster tails

1/2 cup unsalted butter

1/4 cup minced green onions (include some of the green tops)

2 large cloves garlic, finely minced

1 small red radish, minced finely

Juice of 1 lime

2 teaspoons chili powder

1 teaspoon ground cayenne pepper

1 fresh jalapeno pepper, seeded, de-ribbed, and finely slivered

1 tablespoon grated Parmesan cheese

1 tablespoon grated Romano cheese

2 teaspoons ground California mild red chile

2 large sprig of watercress, or other greens

1 lime, cut lengthwise in quarters

Preheat the oven broiler. Using a very sharp knife, cut each tail in half lengthwise. Stop when you reach the back end of the tail. Peel the lobster meat back off the shells. Place the lobster tails in a broiler pan and set aside for now. Melt the butter in a skillet, then add the green onions, garlic, radish, lime juice, chili powder, cayenne pepper. Cook, stirring, until the garlic is golden in color, and the onions are soft, but not browned.

Divide 1/4 of the butter sauce among all the lobster tails, drizzling it over the top of each. Sprinkle each tail with the jalapeno slivers, cheeses, and a little of the California chile.

Broil 4 to 5 inches below the heat source for about 5 minutes, or the meat is just turning white in the center (cut one to test).

To serve, place two tails on each of 4 plates that have been warmed. Garnish each plate with a watercress sprig and a wedge of lime where the cut side has been dipped into some of the California chile. Offer the remaining butter sauce for guests to add to their servings as they please. This recipe makes 4 servings.
