Easy Teriyaki Chicken Recipe

Tangy, sweet flavorful chicken is so easy to make and it goes great with rice.

1 ( 3 pound) whole chicken, cut in half
3/4 cup granulated sugar
3/4 cup soy sauce
1 tablespoon grated fresh ginger
2 cloves garlic, minced

Directions

Rinse chicken halves, and pat dry with paper towels. Place chicken, cut side down, in a 9x13-inch baking dish. In a medium bowl, combine sugar, soy sauce, grated ginger and garlic. Mix well. Pour mixture over chicken. Cover and refrigerate for at least 3 hours.

Preheat oven to 350 degrees.

Bake chicken, uncovered, for 1 hour, basting frequently. Test for doneness, making sure there is no pink left in the meat. Let cool slightly, then cut into smaller pieces to serve.

Jamaican Jerk Chicken

You don't have to take a trip to the islands in order to enjoy this spicy Jamaican treat. This recipe features jalapeno peppers, fresh ginger and soy sauce.

1/2 green onion, minced
1/4 cup orange juice
1 tablespoon minced fresh ginger root
1 tablespoon minced jalapeno peppers
1 tablespoon lime juice
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 ( 2 to 3 pound) whole chicken, cut into pieces

Directions

In a bowl, combine green onions, orange juice, ginger, hot pepper, lemon or lime juice, soy sauce, garlic, allspice, cinnamon and cloves. Add chicken, and marinate for 8 hours.

Prepare barbecue, medium heat. Cook chicken, and drizzle with left over marinade that has been boiled for 2 to 3 minutes.

Savory Chicken Marsala

The addition of Marsala wine makes this chicken extra special.

1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves , pounded 1/4-inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry

Directions

In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.

In a large skillet, melt butter in oil over medium heat. Place chicken in the pan and lightly brown. Turn over chicken pieces and add mushrooms. Pour in wine and sherry.

Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

Thai Cooking

Thai cuisine comes from the country of Thailand on the continent of Asia. Thai ingredients have strong aromas and are characterized by being rather spicy. Thai chefs place emphasis on variety, detail, and balance when performing the art of Thai cooking.

The balance between the five taste senses is one of the foundations of this type of cuisine. Hot/spicy, sweet, sour, salty, and bitter are the five areas that must be balanced within a dish or entire meal. This type of food has been influenced by countries that border Thailand. Many of the most popular Thai dishes, such as stewed pork with rice and fried rice-noodles, actually came from China.

Cooking this type of food involves use of a wok to stir-fry and deep-fry some of the dishes. The meals are often one dish or rice with several accompanying dishes that are eaten family style, meaning that they are shared by everyone at the table. Chopsticks are used to eat noodle soups, but the rest of the food is usually eaten with a fork and spoon. The left hand is used to hold the fork and push the food onto a spoon.

The items used in these meals are cut into bite-sized pieces prior to being cooked. Common ingredients include galangal, curry paste, Thai sweet basil, coconut milk, fish sauce, kaffir lime leaves, lemongrass, and mangos. Staples such as Thai rice noodles and sweet rice are included in many dishes. In addition to the wok, utensils such as a strainer, rice basket, mortar and pestle, skewer, curry pot, and steamer are frequently used to cook the food.

Thai cooking involves incorporating several key ingredients in order to create a meal that is a balance of the five tastes. The food is often spicy and is usually accompanied by rice and eaten family style at the table. This is an interesting form of cuisine that has roots not only in its namesake country, but also in those that border it.

Burmese Shrimp Cake Recipe

Little pounded shrimp balls seasoned and fried till lightly brown. This dish is quite popular as a finger food and is also a good accompaniment to a variety of dished, like the famous Mohinga - A spicy noodle soup with fish sauce.

250 grams of raw shrimps,

2 stalks of spring onions,

2 portions of egg whites,

1 tea spoon of salt,

1 tea spoon of sesame oil,

Some corn flour,

Sufficient oil for frying.

First chop the shrimps, then pound to a smooth paste.

Then season the paste with salt, a little sesame oil and finely chopped spring onions and then knead well to mix.

Bind the paste with some egg whites and a little corn flour and then mash for approximately one to two minutes.

Shape the paste into walnut-sized balls with the palm of your hand and coat with corn flour.

Heat ten to twenty table spoons of oil for deep frying and put in the walnut-sized balls of the mixture which have been lightly coated with corn flour.

Deep fry the coated balls of pounded shrimps over moderate heat until lightly browned then remove and draine well on a kitchen paper.

Lastly place the deep fried balls on a shallow serving platter and provide chili or some spicy sauce for accompaniment.

The next day, I wanted to see my A&I roommate from college, who showed me around. We ate Taiwanese food, rode the subway, went to a toy store and the Apple Store. Exotic Oriental Soups - An Ideal Way To Spice Up Winter Dinners

Oriental soups from the near east and the far east are popular options to their milder western counterparts. They can range from light broths to heavy stew-like soups, which can make a meal in itself. Most oriental soups are served piping hot, which makes them ideal to warm up cold winter nights. Chicken Noodle Soup- A Chinese soup, which is a meal in itself uses chicken, chicken stock, noodles and greens with flavourings such as soy sauce and dry sherry. This could be made in no time with shop bought canned chicken stock and fresh noodles.You could even use dried noodles and chicken stock cubes or powder if you do not have access to fresh noodles and canned stock. Pretty mild when compared to some of the spicier oriental soups.
Japanese Dashi stock based soups- Fresh seasonal vegetables, tofu (bean curd), meats and seafood are barely cooked in steaming hot light Dashi stock flavoured with soya sauce and mirin. Sometimes noodles are added to give volume.The light versions are a good starter for oriental themed meals, while the heavier versions with a higher proportion of solids are a meal by themselves.
Steamboats- A vessel with a hot coal filled funnel,and a trough surrounding it, which holds boiling stock is the basis for the steamboat, which is popular among many cultures in South East Asia. Thinly sliced meat, tofu and vegetables are dipped into the stock in small wire strainers by the diners and the remaining stock is eaten with noodles at the end of the meal. This is a meal in itself and is not for someone who is in a hurry.
Pho-Gha- A Vietnamese well-flavored beef broth with coriander and other spices in which vegetables and thinly sliced beef is cooked, ideal with steaming white rice or noodles as a complete meal.
Tom-Yang-Gung-A spicy sour Thai soup of seafood and vegetables,cooked with coconut milk is ideal for dinner with steaming hot rice. The spice comes from tiny chillies and the sourness from lime juice.
Laksa-Lemak- A filling soup flavored with spices such as lemon grass, galangal, ginger flowers, Vietnamese mint, chillies and turmeric,it contains seafood, vegetables and noodles. This is thickened with coconut cream and can make a meal in itself. It is popular throughout Indonesia, Malaysia and Singapore.
Soto-Ayam- A spicy chicken soup of Indonesian origin,which goes well with steamed rice to make a complete meal. Soto Kambing is the version made with mutton.
Lentil soup- Indian lentil soup is quite filling as it contains a puree of red lentils spiced with garlic, ginger, turmeric, cummin and other spices. Comparatively mild to most South East Asian soups, this goes well with toasted Pita bread or Naan bread strips for a light dinner or lunch.

Although preparing many of these soups from scratch can be quite time-consuming,many of the spice mixes are readily available in most stores in the west, which cuts down considerably on the time required for preparation. Coconut milk either in cream or powder form and many of the vegetables are also freely available in Asian stores or even decent super markets.This makes preparation of oriental soups a breeze for the super-busy housewife who needs something different to warm up cold winter nights.

Fruits & Vegetables roadside at kundasang on our way to Kota Kinabalu, Sabah. Kundasang is a village in Sabah, Borneo that lies along the bank of Kundasang Valley. It is located about 6 kilometres away from Kinabalu National Park and is renowned for its vegetable market which is open seven days a week. It is the closest village to Mount Kinabalu and has a panoramic view of the Mountain. It is populated mainly by the native Dusun and a very small population of Chinese people. Almost 100% shops are operated by locals. Kundasang Vegetable Wholesale stalls: Beside the main road vegetables wholesalers can be found in a long row of wooden stalls (Malay: gerai). Bulk buyers come from all over the state of Sabah, Sarawak and even Brunei for the fresh harvest. Pick up trucks are seen laden fully with harvest from the farms nearby the valley and delivered to the stalls. Passing tourists and travellers also stop by the road for shopping at a good bargain. The stalls are open 7 days a week.

Martin Luther King Jr. Day is an important day in our history. Why not celebrate it by preparing delicious foods like these for your family and friends:

Being from the South Martin Luther King Jr. had many favorite southern style foods. To celebrate the day properly you should consider spicy southern snapper, hot tempered chicken strips, Hoppin' John Rice and Black- Eyed Peas, Southern Cornbread, and Creole Chicken with Rice.

The Olde Southern Kosher Cornbread combines 1 ¾ cups yellow cornmeal, ¼ cup of flour, 1 teaspoon of salt, 1 teaspoon of baking powder, 1 ¼ cups of buttermilk, ½ teaspoon of baking soda, 2 eggs, 2 teaspoons of butter, and a pinch of sugar. You combine the cornmeal, flour, salt, and baking powder in one bowl. In another bowl you will combine the buttermilk and baking soda. Then you will add the mixture to the cornmeal beat in the eggs and stir in melted butter. You will then need to heat the skillet with a little grease and back at 450 degrees for 20 minutes or until golden brown.

Pecan pie is another southern tradition and will top of the menu with a wonderful dessert. For pecan pie you need 3 eggs, 1 cup brown sugar, 1 tablespoon flour, 1 cup corn syrup, 2 tablespoons butter, 1 teaspoon vanilla, 1 ½ cups pecans, and an unbaked pie shell. Preheat the oven to 350 degrees. In a bowl beat the eggs then stir in the sugar and flour. Once that is stirred in add the corn syrup, butter and vanilla. Then fold in the pecans. Place the mixture in the shell and bake for 50 to 60 minutes or until a knife comes out clean.

If you have a few ideas to work from, it's really not that difficult to create a Southern-inspired feast that will have your guests coming back for seconds. Keep in mind though that it's important that you don't miss out - allow time for you to mingle with your guests and enjoy the occasion, and it'll make the day even more enjoyable.
