Easy Lasagna Recipe For the Cooking Challenged

I'll be the first person to tell you that I can't cook worth anything. I was lucky enough to marry a man whose diet already consisted of frozen pizza and fast food ahead of time. My lack of abilities didn't disappoint him. In an attempt to get my food in the culinary door though, I discovered a recipe for lasagna that literally anyone could do. It isn't fancy by any means, but it is tasty and easy to do. If you're looking for a beginner recipe or lasagna, this is a basic as it gets.

What You Need:

-1 Box of lasagna noodles

-1 brick of mozzarella cheese

-1 jar of tomato pasta sauce

-1 pound of ground beef or turkey

-1 glass cake pan (size based on need)

-1 frying pan (size based on need)

-1 large sauce pan

-1 cheese grater

-1 colander

-Aluminum foil

-A few spoons

-A few plates/bowls

-A few spatulas

Step 1 - Boil the Noodles

The noodles take the longest time to cook, so get those going fist. To determine how many noodles you need to cook, see how many it will take to line the bottom of your cake pan. Then multiple that amount by the amount of layers you want to have. I usually cook between nine and twelve noodles.

Fill your large sauce pan a little over half way with water. Set your noodles in one at a time so they don't stick together. Set the burner on high and let them start to boil. Leave them there and move onto the next step.

*Make sure to continue stirring the noodles throughout these next steps, even if I don't mention it.

Step 2 - Defrost the Meat

If your meat isn't already defrosted, take this time to stick it in the microwave and start defrosting. Otherwise, move to step 3.

Step 3 - Grate the Cheese

It takes some time to grate an entire brick of mozzarella, so do that next. It's easiest if you break it in half and then grate the two halves separately. Once everything has been grated, put the cheese on a plate or in a bowl for easy access later on.

Step 4 - Brown the Meat

Your meat should be defrosted now, so take it out and put it in your frying pan. Heat the burner to medium. You might want to drain it before you do this if there is a lot of fat and water at the bottom of the plate. Begin chopping the meat into fine piece and continue flipping and chopping it until there is no pink visible. Once the meat is brown, turn the burner off and set the meat to the side.

Step 5 - Drain the Noodles

If your noodles are fully cooked, put your colander in the sink and drain your noodles. Either leave them there, or put them in a bowl so you can make your lasagna.

Step 6 - Assemble the Lasagna

Pre-heat your oven to 375 degrees Fahrenheit. Put a layer of tomato pasta sauce at the bottom of the pan. Then put a layer of pasta noodles down. Add another layer of pasta sauce and then cover that with the ground meat. Add a layer of cheese. Repeat this noodle, sauce, meat, and cheese layering until you have the desired height to your lasagna.

Step 7 - Bake the Lasagna

Put aluminum foil on top of the lasagna pan and put it in the oven. Bake it in there until the cheese is fully melted. This may take up to 30 minutes, depending o the oven and the size of the lasagna. If you want to brown the cheese on top, switch it to broil and cook it like that at the tail end of the time.

Step 8 - Serve

Take the lasagna out of the oven and let it cool for a bit. Then cut it up and serve it to your family. Pairs great with salad and bread if you're aiming to truly prepare a meal. Enjoy!

Thai Recipes - Pad Thai Noodles Recipe

Pad Thai is a stir fried noodle dish, traditionally made with shrimps or prawns but can also be made with pork, chicken, beef, and even tofu. It can be made to be dry and light or heavy and oily depending on your tastes.

A delicious, quick, easy to prepare, and healthy dish, with low cost ingredients. It's easy to see why this dish is so readily available on the streets of Bangkok, and why it's so popular with budget conscious backpackers.

Flavours are somewhat complex, combining hot, salty, sweet and sour, but together a good balance is created.

Ingredients:
Serves 2

200g of Shrimps or prawns (raw preferred)
2 medium sized eggs
approx 130g of dry rice noodles
4 tablespoons of pad thai sauce
1/2 lime
1/2 cup chinese chives
1 cup of bean sprouts
1 tablespoon of crushed chillis
1 tablespoon crushed peanuts
2 teaspoons of fish sauce
1 carrot (optional)
2 spring onions (optional)
2 tablespoons of vegetable oil

Pad Thai cooking instructions:

Step 1: Soaking the noodles - Fill a large bowl or container with warm water, and place the 130g of dried Thai rice noodles (approx 1/3 of the pack) into the bowl so that the water is completely covering the noodles. They will need about 10 minutes of soaking, so that they become soft, but not cooked.

Step 2: Take the 200g of prawns and using a sharp knife, make a cut along the back to open them up slightly, removing any stringy vein type material from inside. Once this is done, wash them all under cold water.

Step 3: Cut away the bottom 1/3 of the Chinese green chives and put aside for use later. Chop the other 2/3 of the chives up for cooking. Follow by slicing the spring onion diagonally into thin pieces. Also slice the carrot into thin slices, or grate it, keeping a handful aside for use later. Finally cut your lime into quarters, wash the bean sprouts, and your preparation is complete.

Step 4: By now the noodles should have been soaking for about 10 minutes, poor them into a sieve and drain all excess water.

Step 5: Put 2 teaspoons of vegetable oil into a wok or pan, and set your cooker to a high heat. When the wok is hot, put the prawns in (ensure they have been drained of any water to you don't get hot oil spat at you!) Immediately after the prawns, crack the 2 eggs and put the white and yoke into the wok. Stir contents thoroughly adding more oil if required. After a few stirs, add the noodles, and continue to stir quickly and frequently.

Step 6: Add the 4 tablespoons of pad thai sauce, and stir in. Ensure all ingredients are thoroughly mixed together and the sauce evenly distributed. By this stage, all ingredients should have been cooking for just a couple of minutes on a high heat, cook for too long and the dish will become too dry.

Step 7: Add the chopped Chinese green chives, spring onions, some of the chopped carrot, and the bean sprouts into the wok. Once again stir everything together so the ingredients are well mixed. Add the 2 teaspoons of fish sauce, and continue stirring.

Step 8: Now the noodles should be soft and tangled - the cooking is complete. Pour contents onto a plate, and add to the side of the plate the bottom 1/3 of the Chinese green chives, bean sprouts, the 1/4 of lime, 1 table spoon of crushed chillies, and 1 tablespoon of crushed peanuts. Sprinkle some of the grated carrot you kept back earlier over the noodles.

Serve and Enjoy!

Thai Street Food

Thailand is well-known as "the land of smiles." Thais are friendly and well-known as "food lovers." Many say "Thais love to eat. Thais eat several meals per day." In response to these comments, I have to say, yes, Thais love to eat but we eat 3 meals per day just like the rest of the world. The difference is that Thais love to snack. Our snacks range from fresh fruits to deep-fried food. In Thailand, it is so easy to find food. Street vendors are everywhere. If there are people, there are food. One of the greatest joys of living or traveling in Thailand is the abundance and variety of food.

Street vendors, street food, roadside stands, food stands, food stalls or whatever you would like to call it, simply involves something mobile that allows an owner (or a cook in most cases) to push them around, from home and back. Many people may think that street food is not clean, but in fact with many vendors it is clean. And many of the owners are unpretentious. The owners push a cart from home to their selling location and then back home and clean the cart every night. Street food offers an incredibly cheap price and some offer incredibly good taste. Sometimes it is even better than a famous restaurant.

Some street vendors offer such good food that you will have to wait for a table along the street. Particularly in these cases, street food is not only for poor or middle class people - you will often find a businessman or wealthy people ordering the street food. Do not expect a menu from a street vendor because there are not any. Most street vendors only offer one dish, just their specialty. Street food offers a wide variety of choices - curry, fried rice, noodle dishes, stir-fried, salad, fresh fruits, desserts, etc. Basically you name it. You might be able to even find grilled lobsters in China town at a reasonable price. Of course, I cannot forget to mention all the bizarre food like deep-fried frogs, deep-fried birds, deep-fried grasshoppers, etc.

The following are the top 10 street food dishes that I think are better than what restaurants have to offer. In other words, you should buy the following food from a street vendor rather than from a restaurant.

Som Tum - Spicy shredded green papaya salad with peanuts and tomatoes
Larb - Spicy minced meat with chopped shallots, onions, chilies and coriander
Khao Mun Gai - Steamed chicken with rice cooked in chicken stock and garlic
Jok - Rice porridge with ground pork, fresh ginger and green onion (some may add egg)
Lad Nah - Stir-fried thin or wide rice noodles with light gravy bean sauce and Chinese kale
Hoi Tod - Fried oysters in batter with egg on a bed of beansprouts
Pad Thai - Stir-fried medium rice noodles with egg, dried shrimp and fried bean curd sprinkled with peanuts (served with beansprouts)
Satay - Slivers of chicken or pork grilled on a stick, served with sauce and cucumber
Khao Moo Daeng - Chinese-style red pork with rice, boiled eggs and cucumber
Khao Tom - Rice soup with a selection of meat and vegetable side dishes

There is so much more street food than I can list here. The above 10 dishes are those I particularly think are better to buy from a street vendor. One of the greatest joys of living in Thailand is the opportunity to try out food from different places at a reasonable price. I grew up in Bangkok and I have to say that Bangkok has bad traffic. I mean very bad traffic. You can literally sit in a car or a bus for hours and hours. Even though people in Bangkok live with bad traffic, most people will travel a long way through heavy traffic just to eat street food. I have to say I was among them.

Another type of food vendors that I want to mention are not on land, but instead on canals (called Klong in Thailand). Along Klongs, you may find sellers paddling their boats selling fresh fruit and vegetables, noodle dishes, curries, etc. just like street vendors. The quality can be just as good as the street vendors.

Street food can be as good as restaurant food. It is fresh, cheap and good. Part of the fun of living in Thailand is the chance to find street food that is even better than food in restaurants. Some street food may not be as clean, but in many cases, vendors do a good job of making sure the food is clean. There is certainly food for working class people, and food can be found in a wide variety of locations. Next time when you smell some mouth-watering food, stop by and give it a chance. You will not only experience good food, but friendly people as well.

Is Chinese Food Unhealthy?

Next to Pizza, Chinese food has to be on of the more popular takeout foods for Americans. So, is it bad for you?

Chinese food is a favorite of both the native Chinese and American foreigners alike. Their spicy dishes and authentic cuisine suits almost any palate and has endless possibilities. Unfortunately, sometimes Chinese food can be anything but a healthful dinner. Lucky for many Chinese food lovers, there are healthy alternatives that are equally tasty but lower in saturated fats and simple carbohydrates.

Choosing the right type of foods when ordering Chinese takeout can make a world of difference in the nutritional value you will receive. Picking foods that are high in protein, such as chicken or beef dishes and full of veggies are great healthy choices. As a substitute to fried dishes such as sweet and sour or sesame chicken, opt for a sautéed alternative such as cashew chicken or beef and broccoli. These dishes provide nutritional value that other traditional plates such as lo mein lack. Lo mein provides several sources of bad fats and carbohydrates due to the large amounts of noodles and the oil it is stir fried in. Always make sure that the Chinese restaurant you choose serves food without MSG. There have been conflicting reports about the poor nutritional value contained within.

For healthy side dishes, skip the fried egg roll and wontons and instead have a cup of soup. Skip the order of fried rice. It is an unnecessary supply of large amounts of calories. It also contains high concentrations of cholesterol. If available, brown rice is the most healthful alternative to fried or white rice. If possible, on the day you choose to order Chinese takeout, limit your intake of sodium rich foods. Many Chinese meals are high in sodium content due to the use of soy sauce and other additives. Don't add any more salt than necessary once your meal arrives! Additionally, if you are ordering a dish with peanuts, eat them in moderation. Peanuts can be very beneficial and contain many good fats and nutrients. However, eating too many can make a somewhat healthy dish unhealthy quite quickly.

Choosing between inexpensive restaurants and high end Chinese restaurants can also increase or decrease the health of the food served. As a generalization, many high end Chinese food restaurants will have a special menu with specifically healthy options as well as a list of their nutritional content.

When all else fails, do not hesitate to question your server or the manager of the Chinese restaurant. Most are eager and willing to provide you information on their native dishes and are usually very knowledgeable about their cuisine. The majority of restaurants are required to have nutritional content information on site. This could be useful in helping you decide on the best healthy Chinese takeout options.

Real Mexican Food As Eaten by Mexicans

Mexico of course lies next door to the United States of America. This means the people frequently cross the border and so, all over the states, even as far north as Washington State, one can find 'Mexican 'food.

But this isn't quite the same food that is eaten south of the border. The Conquest of Mexico early in the 16th century gave rise to one of the richest ever culinary mixes in history. Cortez and his followers came to the new world in search of gold. They found rather a great wealth of culinary specialties such as chocolate, peanuts, vanilla, beans, squash, avocados, coconuts, corn and tomatoes. In return turn the Spanish brought to the Americas products pork, beef, lamb, citrus fruits, garlic, cheese, milk, wheat, vinegar, spices and wine. The result was Mexican cuisine as we now have it, and explains why it is difficult to decide what is authentically Mexican and what is not. Basically it is the food of the poor - meat is there, but vegetables and maize flour predominate.

Roast Pepper Dip

1tablespoon of extra-virgin olive oil
1 head of garlic, peel intact
3 red bell peppers, roasted, peeled and seeded
½ teaspoon of ground cumin
4oz, 100 grams, cream cheese, room temperature
2 tbsp sour cream or crème fraiche
Salt & freshly ground pepper

You need to preheat the oven to 350 F., 180 C, Gas 4.

Separate the cloves of garlic, place then on a square of foil. Sprinkle with the oil and make up into a parcel. Cook this for about 40 minutes. When cool enough to handle squeeze the soft garlic into your food processor. Add all except the sour cream/crème fraiche and blend. Turn out into a bowl and fold in the sour cream. Place in a screw top jar. It will keep in the fridge for a few days.
Although meant as dip you can go totally non-Mexican and serve it on pasta or baked potatoes.

Crusty Bean Pie

For 6 helpings
1 large tablespoon vegetable oil
1 onion, finely chopped
1 small green bell pepper, deseeded and chopped
1 (15 ounce) can black beans, drained
4 oz, 80 ml salsa
1/4 red bell pepper, deseeded and chopped
¼ teaspoon chili powder
¼ teaspoon cayenne pepper
2 unbaked 9 inch pie crusts
6 oz, 170 g shredded mature cheese - don't use processed cheese as it turns to glue.

Preheat oven to 325 degrees F ,165 degrees C, Gas 3

Heat the oil in a saucepan over a medium heat. Use this to saute the onion and chopped green pepper until soft. Stir in the beans, salsa, red bell pepper, chili powder and cayenne . Reduce heat to low and simmer for 15 minutes. Spoon half of the mixture into one of the pie crusts and cover with half of the cheese. Repeat with remaining beans and cheese. Top with remaining crust. Bake in preheated oven for 1 hour.

This is the kind of pie you can wrap in foil and take on a picnic. You could replace the black beans with whatever sort you have or even sweet corn.

I f you use one of those really stretchy cheeses you can hold a stretching contest i.e. how high can you pull up a forkful of pie before it breaks contact with the food still on the plate.

Sausage Wrap

Use whatever sausages you want.
8 flour tortillas,
200g/7oz guacamole
1 crisp lettuce, shredded
200g/7oz sour cream
200g/7oz salsa

Just cook your sausages. Place on each tortilla some lettuce and guacamole. Place sausage on top and then top this with salsa and sour cream. Roll up and place one end between your teeth. Bite!

The best way to cook this delicious treat is to cook slowly and always in butter. This cooking method was developed and perfected by Master French Chef Fernana Point in the 1950s, at his restaurant La Pyramide.

Point would test visiting chefs by asking them to fry one for him. When the chefs dropped one into a skillet of sizzling hot oil, the Master French Chef would demonstrate his method of cooking them slowly in butter for amazing results. You might not think that using butter and a low heat would give such a different result from using oil and a higher heat, but it really does.

Some people like to use this frying method with butter over a low to moderate heat and others still prefer to use hot oil. It is always a good idea to fry this protein-packed snack over a low heat though, no matter which type of fat you fry them in. Overcooked, rubbery ones are not very appetizing! You can either turn them partway through cooking to do both sides or add a little water to the pan and cover it with a lid to cook the tops.

Fernana Point's Recipe

Add three quarters of a tablespoon of butter to a skillet and let it melt into a spreadable consistency. Break an egg on to a saucer and slide it into the butter. Cook the egg over a very low heat so the yolk becomes hot but stays liquid and the white turns slightly creamy.

Melt some more butter in another pan. Transfer the cooked eggs to a warmed serving plate and add salt and pepper to taste. Pour the fresh, warm butter over it and serve. It is important to use the freshest eggs you can get when making this recipe because they hold their shape better.

How to Make Steam-Fried Eggs

Lightly grease a skillet with butter and heat it. Add the eggs and turn the heat down to low. Cook them for a minute or until the edges are white. Add a teaspoon of water to it, a teaspoon and three quarters of water if you are cooking two or two and a half teaspoons for three.

Cover the pan with a tight lid to keep in the steam. Cook until the whites are set and the yolks are thick without being hard. Season with salt and pepper and serve. These taste similar to when you use butter for cooking them because the steam keeps them soft, juicy and perfectly textured.

Mouthwatering Serving Ideas

You can serve this dish for breakfast along with sausage, bacon, hash browns, mushrooms, tomatoes and anything else you fancy, or simply on toast. They are also a great garnish for a lot of rice or noodle dishes, especially Asian ones. Be creative. This delicious snack complements so many dishes, especially when you know how to cook them properly, slowly and in butter.

A fried egg sandwich is considered by many people to be a great comfort food and you can add some ketchup, barbecue sauce, or Worcestershire sauce to give even more flavor to this tasty treat. This sandwich would be great for any meal, including breakfast, or even as a tasty pick-me-up in the late morning or afternoon.

Add three quarters of a tablespoon of butter to a skillet and let it melt into a spreadable consistency. Break an egg on to a saucer and slide it into the butter. Cook the egg over a very low heat so the yolk becomes hot but stays liquid and the white turns slightly creamy.

Melt some more butter in another pan. Transfer the cooked eggs to a warmed serving plate and add salt and pepper to taste. Pour the fresh, warm butter over it and serve. It is important to use the freshest eggs you can get when making this recipe because they hold their shape better.

How to Make Steam-Fried Eggs

Lightly grease a skillet with butter and heat it. Add the eggs and turn the heat down to low. Cook them for a minute or until the edges are white. Add a teaspoon of water to it, a teaspoon and three quarters of water if you are cooking two or two and a half teaspoons for three.

Cover the pan with a tight lid to keep in the steam. Cook until the whites are set and the yolks are thick without being hard. Season with salt and pepper and serve. These taste similar to when you use butter for cooking them because the steam keeps them soft, juicy and perfectly textured.

Old Fashioned Comfort Food - Casserole Recipes

One of the areas where many families are cutting back is on eating out and the food budget. Casseroles to the rescue. Casseroles are inexpensive to make, feed several, and they are comfort foods. Here is a variety of old-fashion casserole recipes for you to choose from. Try our Beef and Rice Hot Dish, Turkey Noodle Casserole, or Tamale Pie. Surely one will be a big hit with your family.

BEEF AND RICE HOT DISH

1 lb hamburger meat
1 med onion, chopped
1/2 cup chopped green pepper
1/2 tsp salt
pinch pepper
1 1/2 cups uncooked instant rice
1 can (14 1/2 oz)stewed tomatoes
1 can (8 oz) tomato sauce
1 1/2 cups hot water
1 tsp prepared mustard

In a large skillet, brown hamburger meat and drain. Add onion, green pepper, salt and pepper to skillet and cook over medium heat until vegetables are tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Serves 4.

TURKEY NOODLE CASSEROLE

2 cups cooked, drained noodles
1 tbsp margarine, melted
5 tbsp grated Parmesan
4 to 5 slices cooked turkey
1 cup milk
1 cup shredded Cheddar cheese

Mix noodles, margarine, and half of the Parmesan cheese. Pour into a greased baking dish. Top mixture with turkey slices. In saucepan, heat milk and Cheddar cheese until cheese melts. Pour over turkey and top with remaining Parmesan. Bake at 350 degrees for 40 minutes.

TAMALE PIE

2 lb hamburger meat
2 medium onions, chopped
1 tbsp chili powder
1 bell pepper, chopped
1 cup vegetable oil
2 tsp red pepper
1 1/2 tsp salt
1 can whole kernel corn
1 can diced tomatoes
2 cups corn meal
1 cup milk
3 eggs

In a large skillet, brown hamburger meat in oil with onions, chili powder, bell pepper, red pepper and salt. Do not drain. When meat is brown, add corn and tomatoes. In a large bowl, mix corn meal, milk, and eggs. Add skillet mixture and mix well. Bake in a greased 9 x 13-inch baking pan for 30 minutes or until done at 375 degrees.

Indonesian Food - An Introduction

Have you ever tried some tasty Indonesian food? Or maybe ever heard of it? Not like Chinese or Italian food which already well-known all around the world, Indonesian food is probably not so popular.

Indonesian culinary art was influenced by different nations such as Chinese, Arab, Portuguese, Spanish, English and Dutch that came to do the trading on these islands long time ago. The beauty and the richness of spices made the Dutch occupy the country for 350 years. They affectionately called Indonesia gordel van smaragden (The Belt of Emeralds). During their occupation, they planted tomatoes, cabbage, cauliflower, carrots, green beans and lettuce in the highlands where they flourished in near-Dutch weather condition. While the Indians traders brought cucumbers, eggplants and onions in the land, the Spanish and Portuguese brought chilly peppers from America.

It is the Chinese who have had the greatest influence on the food in Indonesia. They introduced noodles, soy sauce, which the Indonesians modified to suit their taste by adding sugar (kecap manis); mung peas used to make bean sprouts; beancurd (tahu) and Soya beans, which the Indonesians learned how to ferment to make the excellent and nutrious Tempe.

The "typical" Indonesian meal is being based on rice, with several savoury side dishes of vegetables, fish, meat or poultry, accompanied by a hot chilly condiment known as sambal, with crackers (krupuk) or fried shallot to provide a crunchy contrast. Probably the most well known of Indonesian dishes are Chicken Satay (Sate Ayam), Fried Rice (Nasi Goreng) and Fried Noodle (Mie Goreng). Eventhough there are many others since the country so big with different kind of ethnic groups.

Eating Indonesian food can be an interesting experience. The diversity of the country will bring you to taste variety of foods. Each of Indonesia's ethnic groups uses the country's entire rich array of the spices, but each has its own combinations and tastes: spicy, sweet, hot and sour. But the real magic in Indonesian cuisine is in the use of aromatic seasonings: fresh red shallots, fresh garlic, fresh rhizomes such as ginger, turmeric, galangal (lengkuas or laos) and other type if galangals such as kencur and temu kunci. There are also fresh leaf seasonings like lemon grass, lemon basil (known as kemangi), kaffir lime, daun salam ( a type of bay leaf), turmeric, Chinese celery and pandan leaf. Although the country is a major producer of spices like nutmeg and cloves, these spices are rarely used in Indonesian's cooking. For sweet taste, they usually add coconut milk, sweet soy sauce or palm/coconut sugar. While the sourness comes from tamarind water, lime juice and sometimes vinegar.

Travelling around Indonesia can prove to be a real challenge for your cuisine curiosity. Indonesia has it all ... from sweet to very spicy food. It is impossible to describe every specialty here since are too many of them. As the world's largest archipelago, Indonesia is a heaven of good food that will awake all of your senses.
