The Mystery of Pad Thai Sauce

Have you ever wonder if you need a Pad Thai sauce to make your delicious Pad Thai dish? Well, the answer is yes and no. For those who have never tasted it before, Pad Thai is a stir fry noodle with a unique taste which is a very popular Thai food abroad. For the sauce, it is nothing special but a pre-mix of key ingredients.

If you have a chance to visit Thailand, you will find out that it is hard to find such thing on sale anywhere. However, searching the internet, you will learn that a popular shopping site such as Amazon carries it on sale at a high price which could buy you 50 ready made dishes at the local price.

It doesn't mean that local Thais don't use it. For popular noodle shops where many customers are waiting at the same time, chef usually mixes ingredients in advance to save time and to basically quality control their taste. However, for smaller shop or home made, ingredients are usually mixed over the wok. That's the main reason why it is hard to find it on any local stores.

For the beginner, you will be better off pre-mixing the ingredients beforehand. The advantage is that you can taste it to see if the taste is right. The taste can be adjusted to perfection without any need to rush. To mix ingredients over the wok, you only have 1.5-2 minutes before the noodles are done. You can see that I will be hard for the beginner to adjust the taste over such a short period of time.

So now you decided that Pad Thai sauce is the way to go. Good news is that you don't have to spend your fortune to buy it. It is easy enough to make it yourself.

First, let's start with the original tastes. The recipe has 3 main tastes sour, salty, sweet, and spicy (which is scientifically not a taste). You can substitute any ingredient with ingredient that can be found in your area. It can be illustrated as follows:

1. Salty : Fish or Soy sauce or Soy, or even just salt
2. Sour : Tamarind paste or vinegar
3. Sweet : Palm sugar, Cane sugar, any sugar actually
4. Spicy (optional) : dry hot chili powder

You start with half a cup each of fish sauce, tamarind, and sugar. If you like it hot just add dry chili powder. However, do note that spice it is not really a mandatory, you can add hot dry chili later after the cook is done as well.

Mix all those ingredients together in a pot over a low heat oven. Taste and adjust the flavor balance until it is right for you. Continue to stir until it completely mixed. If you plan to keep it in the refrigerator, cook it until it boils. Otherwise, just stir them until they are completely mixed and you can start heating up the wok.

Ramen Noodle Tips

Awe...those quick, easy and inexpensive Ramen noodles. There are so many ways to cook these long and curly noodles.

Take a package of the chicken flavored Ramen noodles and follow directions on package. Remove noodles after cooking and place them in an airtight container, but before closing the lid place 3 slices of Velveeta cheese (3 thin individually wrapped slices). Let set for 5 minutes. Remove lid and stir thoroughly and you have one of the most quick delicious meals that's similar to Mac 'N' Cheese, but better.

Another way is to take two packages of the chicken flavored Ramen noodles and follow directions on package. Remove noodles and drain most of liquid; add flavor packets then add a small can of Rotel tomatoes and chili's; next add 6 indivdually wrapped slices of Velveeta cheese. Cover and let sit for 5 minutes. Remove cover and stir thoroughly; serve warm. It's absolutely delicious.

One more great way is to take one package of the chicken or beef flavored noodles and follow directions on package. Drain noodles and rinse; add 1 tablespoon of olive oil and 1 tablespoon of minced garlic and toss to coat well; serve warm. This is so simple but absolutely delicious.

This is just a few ways to fix Ramen noodles. Let your taste buds decide new creations.

Easy Cheap Recipes - How Low Can You Go?

Meal #1) Moujadra - This is a Lebanese dish consisting of lentils and rice topped with crispy onions. Cook 1 cup green or brown lentils according to package. At the same time, cook 1/4 cup brown basmati rice with 1 tsp ground cumin in water according to package. Heat 1/4 cup olive oil in a pan and add 1 large onion, sliced thinly. Fry til brown and crispy. Combine cooked lentils and rice. Top with crispy onions and salt and pepper to taste. Total cost for this dish: lentils $.60; rice $.20; cumin $.05; onion $.40 = $1.25. Our family likes to have 1/2 cup of crispy fried onions per person. See what your family likes. This is definitely one of our favorite easy cheap recipes.

Meal #2) Dad's Concoction - This meal was my Dad's concoction when we were kids. Now my family is enjoying it too. Combine the following in a pot and heat just to warm up: 2 cans pork & beans, 2 cans pasta in tomato sauce (we used canned spaghetti), 1 cup of cooked sausage scramble-fried with chopped onions or celery or both. Serve on slices of thick buttered toast. Total cost for this dish: pork & beans $1.40. Pasta $1.50 Sausage and onions $.90 Bread $1.00 = $4.80. This recipe is a little low in the vegetable food group, so make sure your side is a vegetable. This is our family's second favorite easy cheap recipe.

Meal #3) Ramen Noodle Stir-Fry - Cook 4 packages of ramen soup noodles and drain. Meanwhile, steam 2-3 cups frozen mixed vegetables or saute fresh raw vegetables until tender in a little oil. Scramble 2-4 eggs with chopped onion, dry parsley and minced garlic. Add all together and toss with oyster sauce, soya sauce, or a little catalina salad dressing. If you like yours spicy, sprinkle in 1 of the seasoning packets from the soup. This is our family's third favorite easy cheap recipe. Total cost for this dish: soup $1.00; vegetables $1.00; eggs $.35; onion, parsley and garlic $.25 = $2.60.

It is important these days to be able to put quick, easy, cheap meals on the table for yourself and your family.

Sour and Spicy Brinjal Or Eggplant

The Sour and Spicy Brinjal/Eggplant is a typical Indian (bengali) vegetarian dish that is not only is easy to prepare but also tastes real yummy. This is a dry dish mainly served for dinner with Chapatti. It takes only 30mins to cook this dish. The punch of tamarind really brings in unique taste to this spicy dish.

Ingredients

5-6 very small sized brinjals/eggplant
Turmeric Powder
Red Chilli Powder
Tamarind
Panchforan (a mixture of 5 Indian spices)
Dry Red Chilli
Garlic Paste
Coriander Powder
Cumin Powder
Vegetable Oil
Salt

Preparation Time: 10 min

Cooking Time: 20 min

Serves: 3

How to make Sour and Spicy Brinjal/Eggplant

1. For each brinjal, cut it into 4 pieces from the opposite side of the green end of the stem where Brinjals are cut off but do not complete separate the 4 pieces, leave the end of the green stem joined. So you will have 1 small brinjal split into 4 at one end and joined at the other. Also do not completely cutoff the green stem, leave some on the brinjal.

2. Put salt and turmeric inside the brinjal splits (and also some on the outside) and fry in vegetable oil, till the brinjals are soft but not completely cooked. Keep aside the fried brinjals.

3. In another non-stick frying pan, put a small quantity (1 teaspoon) panchforan (mixture of 5 spices), dry red chilli into warm vegetable oil.

4. When the mixture starts to splatter, put a thick mixture of 2 tablespoon of coriander powder, 1 tablespoon of cumin powder, 3/4th tablespoon of powdered red chilli (up-to taste), 1 tablespoon of turmeric powder, 1 tablespoon of garlic paste, 1 tablespoon of salt (as per taste) and water (not much, just enough to make the paste thick).

5. Fry the spices (Step 4) till oil comes out with nice smell. Keep adding very small quantities of water if it becomes too dry.

6. Now put the fried brinjals (Step 1) in the frying pan and also put 1 cup of water (enough to half-submerge the brinjals).

7. Add 0.5 inch cube of tamarind in warm water and dissolve it completely. Put this liquid to the frying pan (Step 6) mix well and cover the frying pan. Cook for 10-15mins in low-medium heat. Put water if it becomes too dry. But do not put too much water as this dish is a dry one.

8. When the brinjals become soft, taste the thick gravy for any additional requirements (salt, red chilli powder).

The Sour and Spicy is now ready to serve for dinner with Chappati.

Meals That Save Money

There are a number of reasons to stretch your grocery budget. Sometimes you dig into the pantry just to clear out the cans of forgotten foods. There are other times when you are nearing the end of the month and the money is just not there. And then there are those times like today when I just couldn't bring myself to do the grocery store thing.

It amazes my husband at the dishes that I can create from the pantry, but if I would do it more often then we could probably save about $3600 per year! Just writing that makes me want to tighten up the grocery budget.

Cheap Meals that Save Money



1. Chicken Ramen Casserole - this was going to be Ramen noodles but the middle son came in while I was cooking and announced that he didn't LIKE Ramen noodles. So I mixed in a can of cheese with the noodles, covered the bottom of a casserole dish with Ritz crackers and poured the noodles and chicken over the crackers. I topped it all of with a cup of shredded cheese and then popped it into the over until the cheese melted. All the kids loved it, my husband loved it and I loved it as well. The whole casserole cost around $6.00.

2. Mini pizzas - (this can be a great way to use leftovers). Toast up some English muffins. Lay the muffins out and top each one with about a tablespoon of spaghetti sauce and a pinch of cheese on each one. Top the muffins with your favorite toppings. Ours cost around $5.00 for the whole meal.

3. Strudel - this is a family favorite. Roll out a couple of pieces of puff pastry. Cover each piece with a quarter cup of cheese and whatever meat or veggies you have in the frig. We do ham and cheese, turkey and cheese, and breakfast straddle with egg, bacon (or sausage) and cheese. Roll each piece of puff pastry up and then pinch the edges closed. Cook according to directions for the puff pastry. Total cost is around $6.00 - and you use up all of your leftovers!

The key to creating a casserole that saves money is to take several elements from your pantry or frig and just throw them together. A pasta with a meat and some cheese or sauce makes a great meal almost any night of the week.

Shrimp Scampi Recipes

Many people have different ideas on how to prepare great shrimp scampi recipes as you will see below. Some of the ingredients are the same and usually it is served with pasta. The type of pasta that you serve with your dish is up to your own taste.

Here are two shrimp scampi recipes that do vary in style. For the first one you will need:

2 pounds of shrimp,
¾ pound of melted butter or margarine,
3 chopped green onions,
4 tablespoons of crushed garlic cloves,
¼ cup of lemon juice,
½ cup of dry bread crumbs,
1 egg,
1 teaspoon of seasoning salt,
2 teaspoons of hot sauce and salt and pepper to taste.

Be sure to clean and de-vein your shrimp. Preheat your broiler. Cut them into a butterfly style. Place them in a large pan. Now, combine the butter, green onions, garlic, lemon juice, bread crumbs, and egg, seasoning salt, hot sauce, salt and pepper. Now place this mixture by spoonfuls over the shrimp. Broil for around 5 minutes until done.

Other shrimp scampi vary also in the ingredients but are just as tasty as the one above. For this recipe you will need:

1 pound of thin spaghetti noodles,
1/3 cup of olive oil or vegetable oil,
2 pounds of shrimp,
1 tablespoon of chopped garlic,
¼ teaspoon of crushed peppers,
¼ cup of chopped green onions,
1 cup of diced mushrooms,
¼ cup of white wine,
¼ cup of butter,
salt and pepper to taste.

To prepare you need to cook the pasta until it is al dente, usually around 3 to 5 minutes, drain and set aside. In a large skillet, heat the oil. When the oil is hot, (sprinkles of water will dance around the pan) sauté the shrimp for a few seconds. Now add the garlic, peppers, green onions and mushrooms. Cook for about one minute. Now add the wine and bring to a boil, cook until slightly thick. Remove from the heat and add the butter, stir until dissolved. Now, you can add the pasta and gently stir. This is a very wonderful and unique dish that everyone will love.

Finding the best shrimp scampi recipes are a matter of taste. You can try all different types of spices and other ingredients that you want to try to create your own recipes. Usually shrimp scampi is kind of spicy, so you can try other items such as salsa, for a new and unique flavor that no one else has thought of to add to the basic recipe.

Betty's Oh-So-Easy Cheddar Cheese Stuffed Manicotti

In this video, Betty shares her super-quick, super-easy cheddar cheese stuffed manicotti with pasta sauce recipe. Hardly any work, but great taste! 1 medium to large pot of water, boiling 8 oz. package manicotti noodles 1/2 teaspoon salt 16 oz. sharp Cheddar cheese 1 lb. 10 oz. jar Pasta sauce (I use Prego, meat-flavored) Grate Parmesan cheese (to taste) Place the 14 manicotti noodles in the boiling, salted water. Cook until almost tender--al dente. Remove from heat and drain off the water in the sink using a colander. Rinse the hot, cooked noodles in the colander under cold water, until they are cool enough to handle. Place the colander back on top of the pot to catch any additional drips. Now, slice the cheese into 16 equal (1 oz.) strips. Place one strip inside each cooked manicotti noodle and place in an 8 inch by 12 inch Pyrex baking dish, which has been sprayed with cooking oil. (You can also spread a thin, even layer of Prego sauce over the cooking spray before placing the noodles in the baking dish.) Continue to place the stuffed noodles in the baking dish until you have one layer. Now, pour more of the Prego sauce evenly over the noodle layer, until about half of the bottle of Prego remains. Finish placing the rest of the stuffed noodles in a new layer on top of the previous layer until all stuffed noodles are used up. Pour the remaining Prego sauce over the top of the layered noodles. Spread the sauce evenly over the top, and sprinkle as much grated Parmesan ...

If You Are a Foodie, You'll Love This History of Ginger - Just Don't Ask Where it Came From

Next to the King of Spices, Black Pepper, Ginger is perhaps the most frequently used, widest spread and overall most successful of all the spices.

Interestingly, for such a common food, we have no idea where it actually originated.

Black pepper was first discovered, and is still grown, in the mountains of Southern India. Cloves are claimed by the Spice Islands and Zanzibar. But no one know where exactly ginger first appeared.

Farmers Have Become Ginger's "Wing Man"

Wild ginger, as it might have been found by some lucky caveman or woman - or maybe a Neanderthal - tending their small plot of veggies, no longer exists. It has been grown by human for so long that it no longer produces seeds and has become totally dependent upon man to continue.

By the way, corn is another plant that is in a similar situation. It totally depends upon man to open it's seed pods (the ears) and spread the seeds. If man stopped shucking and shelling the kernels, it has been estimated that corn would be extinct inside of 3 years.

Ginger is propagated by splitting the root. This is the reason that it is so hard to determine exactly where it started from.

Historic Evidence in Languages

Six thousand years ago the Austronesians, who lived around the area that is today Southern China, migrated westward. Eventually, and I mean over several thousand years, they populated vast areas all around the Indian Ocean as far south as Madagascar.

Through "linguistic detective work" we know that this movement took place and we also know that one of the things the took with them on the journey was ginger. The word "ginger" as remarkably similar in the many languages of the lands around the crescent bordering the Indian Ocean.

The Spice of the Common Person

Part of what made ginger so widespread was the fact that it never became a superstar in the spice world.

While the holds of the early Arab and later European trading ships would be full of black pepper or cloves, up top the sailors would have ginger growing in wooden troughs for their own use.
Ginger was, and still is, eaten to aid indigestion, help circulation and prevent scurvy. It also just tastes good - something a sailor on a years-long sea voyage would especially appreciate.

Naturally, as some of them decided to leave the ship and settle in these foreign lands, they took their ginger with them. And unlike many spices, ginger will grow almost anywhere.

There is More to Thai Food Than Meets the Eye

Thais love food! It is everywhere. No matter where you are in Thailand, you are almost always within walking distance of food. In many western countries you have to drive for miles to find something edible, but here it is everywhere. Restaurants, food vendors with carts on wheels, mini restaurants set up on motorbikes with sidecars, food markets, food stalls, floating food vendors, grocery stores, supermarkets... You can always find something to eat regardless of the time of day or night.

Food in Thailand is so important that a common way of greeting someone is "did you eat already?" You see people eat in public at all times and in all places. Eating is not considered a private affair.

oWesterners go to a park to be in nature, Thais go to a park to have a picnic.

oWesterners go to the beach to swim and get a tan, Thais go to the beach to eat and drink.

oWhen Thais go to any outing in nature, they always take a basket with food and drink.

Have you ever been asked in the US if you like American food? Most likely not, because nobody really cares what food you like. Have you ever been asked in England if you like English food? Probably not because nobody is interested in your culinary taste.

However in Thailand you will be asked countless times if you like Thai food. If you meet a Thai, chances are that in the first few minutes of conversation you will have to answer this question. If you say that you do, you become a little more acceptable. If you indicate that you like spicy food, you move up the acceptance ladder even more. But if you say that you really don't care so much about Thai food, people will be perplexed and wonder and even ask you why you have come to Thailand then.

We just had the 22nd annual food festival here in Chiang Mai. It is a huge, week-long event with hundreds of food stalls and thousands of visitors crowding the area every night. There is a gigantic stage with all kinds of entertainment, speeches, bands playing, and dance performances. Thais love a good party. The food is incredibly colorful and there seems to be an unending variety of different dishes, most of it prepared in front of your eyes.

Thais don't eat like westerners. They don't have drawn-out sit down meals with starter, salad, main course, dessert and coffee. Meals mostly consist of one plate of food which is not only eaten quickly but also prepared in no time.

Unlike western restaurants where your meal order can take 20 or 30 minutes, in Thailand most dishes can be prepared literally within minutes. Thais don't eat big meals, but rather small meals frequently throughout the day.

Thais are very attached to their food, and they don't take easily to international cuisine. When they travel outside of Thailand, many times their biggest challenge is not being able to eat Thai food.

Eating in Thailand is inexpensive, convenient and fun. Imagine strolling around, picking up a fresh squeezed orange juice, having a quick "pad thai" noodle dish for US$ 0.50, sampling a local sweet, drinking some fresh coconut juice, eating a steamed sweet potato or a black bean dumpling, all available right on the street or in a market -- within walking distance. No wonder food is so important here!

Beef Noodle Recipes

One of the most simple and tasty dishes you can prepare for your loved ones on a weekly basis is Beef Noodle Dishes. Beef noodles are extremely yummy, quick to create and can be cooked in a multitude of to keep every member of your family satisfied at dinner time. Here are some hints.

Beef noodle dishes most often consist of pasta noodles and a beef sauce. Beef sauces can come in a variety of styles. Some people create beef sauce using soups. A favorite of mine is to use canned Mushroom soup or if you prefer canned French onion soup mix. Feel free to also use dry beef soup mixes. While I do think the canned mixes generally deliver a better recipe, the difference in taste is generally not that noticeable.

For noodles, I generally use wide and flat pasta noodles. However, everybody has a noodle they prefer. Some prefer long thin noodles, others like them long and thick and then you have loved ones that enjoy wide noodles or pasta shapes. Generally speaking they all taste much the same, with a little difference due to texture. However, it is generally a great idea to change the style of the noodles around to keep the entire recipe fresh.

Adding beef to your beef noodle recipe is favored, but actually not a necessity. For those that prefer chunky beef noodle recipes use hamburger meat. Others might appreciate Swedish meatball type beef in their recipes and thirdly, feel free to use steak for tasty hot dishes and beef noodle stir fry's.

Beef Noodles with Mushrooms

-1.5 pounds of lean hamburger meat

-1 can of mushroom soup mix

-2 beefsteak tomatoes

-1 onion chopped finely

-4 to 6 ounces of sliced mushrooms

-16 ounces of noodles

-Salt and pepper- season to taste

Combine all ingredients in a casserole, heat for about 30 to 40 minutes
Boil noodles, butter to taste. Once cooked, place over hot, buttered noodles. This recipe yields about 6 servings.

French Onion Beef Noodle

-1.5 pounds of stewed beef

-1 can of French onion soup mix

-1 green onion chopped finely

-2 onions chopped finely

-16 ounces of noodles

-Salt and pepper- season to taste

Cook in a crock pot for about 8 to 10 hours on a low temperature. Boil noodles and place cooked contents over your noodles. This recipe yields about 6 servings.

Chinese Beef Noodle Stir Fry

-1.5 pounds of sliced steak (skirt steak tastes great, sometimes listed as diaphragm)

-1 red pepper

-1 green pepper

-1 can of Chinese vegetables

-16 ounces of noodles - Chinese style

-Soy sauce- season to taste

-Olive oil

Boil the noodles separately. In a large frying pan or wok, add some oil and start cooking the steak first. Once mostly cooked, add veggies, peppers and soy sauce to taste. This recipe yields about 6 servings. Besides soy sauce, you can use some of the numerous oriental sauces available, such as Hoisin sauce, plum sauce, Thai spicy sauce, etc.

Hamburger Stroganoff Delight

Ingredients:

1½-pounds Hamburger

1-small Finely chopped onion

1-packet Onion Soup mix

1-cup Sliced fresh mushrooms

1-can (10¾ ounces) Condensed cream of mushroom soup

1½-cups Long grain rice

3-cups Water

½-cup Sour cream

2-tablespoons Chives

1-teaspoon Salt

½-teaspoon Pepper

½-teaspoon Garlic powder

Instructions:

Fry hamburger and finely chopped onions in a large skillet over medium heat. Place meat and onion mixture in 2 to 3 quart slow cooker, mix meat mixture with onion soup mix, garlic powder, salt and pepper; mix until evenly coated. Top with sliced fresh mushrooms and condensed cream f mushroom soup.

Cover; cook on low heat for 7 to 8 hours.

About 30 to 45 minutes before serving, cook rice in water as directed on package. Right before serving, stir sour cream into beef mixture. Sprinkle with chives and serve over rice.

6 - 1¾ cup servings

Note: You can easily substitute the rice for pasta/noodles of your choice. Replace the 1 1/2 cups of rice with 3 cups of uncooked pasta/noodles and follow directions on the package and replace the 3 cups of water with the correct amount of water as per the pasta/noodle package directions. Also, if you like food spicy then just add crushed red pepper flakes or a few dashes of Tabasco.

The Federal Democratic Republic of Nepal is a wild beauty, with so much more to offer than its legacy of the Mount Everest to which it is mostly predefined. The majesty of the mountains and the nature and the overall spirituality the place elicits gives it right to the acclaim as the abode of the gods, for more than these reasons. Nepal is the birth place of Siddhartha Gautama Buddha, or Buddha, the founder of Buddhism. Also, being one the most preserved natural environments with over 3,000 temples, to be spiritually connected and feel at one with nature is hard to resist. PEOPLE & CULTURE

Rich as the natural environment, Nepal is also one of the richest cultural landscapes in the world, especially with a strategic location between China and India. There are about 103 languages and dialects in Nepal and just as much ethnic groups. The NEPALI, which not only refers to nationality, is the language of the land with almost half the 28,563,377 population as speakers (46%) and the Chettris are the domineering ethnic group. ENGLISH in Nepal has a far journey to behold without proper programs in teaching. English is thus restricted to a diminutive elite population.

Fundamentally, to understand the Nepalese, is to understand that religion is their way of life. Nepalese cuisine has a rich variety as well that is an attraction in itself. Nepalese food revolves around the ethnicity, soil, and climate that all factors combined defines its eater. Dal-bhat-tarkari is a national dish made of lentil (dal) and vegetable curry (tarkari) served on top of steaming hot rice (bhat) Bhat is the staple and could be in any other grain form. Nepalese cuisine also has spicy noodle soups, a diverse meat collection from freshwater shrimps to lamb, and vegetables of sorts. If the famished traveller desires a taste that is quite familiar, the local appetizer chatamari is a la pizza by feature and taste. By the way, the Nepalese are also experts on vegetarian cuisine. Desserts are another world in this other world of a nation, and one always a thrill to integrate in the body system. Nepalese desserts are dairy-based and for the most parts, constituting of flour, rice and fruits.

Certainly, after Nepal, no one can continue with life as before. For the more calm unruffled audience, leisure pit stops to yellow mustard fields, green tea gardens and crystal blue lakes will completely suffice. There also are the 7 UNESCO World Heritage Sites from the sacred birth place of Gautama Buddha in Lumbini, the city of fine arts with artifacts that par excellence, or Shiva's colossal temple Pashupatinath for a historically-themed travel without compromising beauty and grandeur.

Korean Food: Spicy Chicken Noodle Soup
